Marbled squid ink with fresh ground sprouted white whole wheat berries Very cool crumb on this guy - and super pleased with the incredible depth of the flavor - the rich umami flavor of the ink comes across as mildly briny (not fishy at all). If you haven't tried this, you should give it a shot! The ink is added at the step of the autolyse, so that I can easily whisk it into the water for even distribution. Marbling with a white dough gives the crumb a really interesting effect. Hold back a bit of salt as the ink carries with it some salt. Full recipe is below Enjoy!

Specs: All hand mixed Dough A is white, while Dough B is black, naturally dyed using cuttlefish squid ink (Amazon product number B00SJHEFBQ). Dough A: Autolysed 150g flour [a mix of 20% (33g) white Kamut and 117g bread flour (@kingarthurflour)] with 118g water.
Dough B: Autolysed 100g flour [a mix of 20% (22g) white Kamut and 78g bread flour] with 75g water and 6.5% (7g) squid ink.
Let doughs rest 3 hours to autolyse.
Added 20% (30g for Dough A and 20g for Dough B) levain.
30 min later, added 2% (3g for Dough A) and 1% (1g for Dough B) sea salt, and immediately after, 15% (25g for Dough A and 16.5g for Dough B) lightly ground up fresh, sprouted wheat berries.
6 hour total bulk ferment at ~75°F with 1 light fold, 1 lamination, & 2 coil folds separated by 90 minutes. *Doughs A & B were layered together during the lamination step as I've shown previously (see YouTube channel at Full Proof Baking)
Tipped out at the end of bulk and straight to final shape, then transferred to banneton. Proofed at room temp 30 min, then placed overnight 12 hours in wine fridge (temp range 39.9-45.6°F). Baked using @challengerbreadware.

Per uno sfizioso antipasto o uno spuntino estivo: Pane nero con crema di caprino alle erbe e bresaola.
• 6 fette di pane nero
• 160 g di formaggio caprino fresco
• 12 fette di Bresaola della Valtellina IGP
• 1 rametto di salvia
• 2-3 rametti di maggiorana
• qualche stelo di erba cipollina
• rucola
• olio extravergine di oliva
• sale e pepe
1. Pulisci la salvia e la maggiorana, stacca le foglie e tritale finemente; tagliuzza l'erba cipollina con le forbici. Metti tutto in una ciotola, unisci il caprino e lavoralo con 1 cucchiaio di olio, sale e pepe fino a ottenere una giusta cremosità.
2. Dividi le fette di pane in modo da ottenere 12 triangoli. Disponi su 6 fette qualche ciuffetto di formaggio aiutandoti con una tasca da pasticciere con bocchetta a stella oppure con un cucchiaino.
3. Aggiungi 2 fettine di Bresaola su ogni fetta di pane, decora con foglie di rucola, copri con le fette di pane rimaste e servi.

Snuck outside for a quick photo op before the rains set in -- this pudgy lil loaf is another new one we're really excited to bring to market tomorrow: #blackbread ... A couple weeks back at Ferment Fest we ended the day with quite a few loaves unsold, and plenty of those were rye. We weren't left much of a choice but to slice and freeze most of it while we worked on some formulas for #oldbread breads! So tomorrow, at #kitsilanofm you'll get to try this new kinda #rye (warning: it contains coffee and our upcycled #fermentfestvan unsold Danish rye bread). We'll have 6 different kinds of #ryebread tomorrow, fyi.
Truth be told, Ferment Fest wasn't all we had hoped, but we're pretty happy it got us making some killer black bread.
