When asked his thoughts on non-traditional plating techniques, @james_simpson86, executive chef of the Culinary Vegetable Institute, pointed out that it’s important to first consider traditional plating. By that, he meant what foods were placed on the plate, along with how they were prepared and in what proportions. “Using that perspective,” he says, “this type of plating consists of putting food that’s about 70 percent cooked protein, traditionally prepared, on a plate—with most of the rest of the plate containing traditionally-prepared vegetables. I have been dreaming of growing my own vegetables and herbs for a very long time! I grew up in a small village where all the vegetables that my mother was cooking were picked the same day. I’ve been missing that kind of cooking and I was looking for an opportunity to achieve this dream for the past few years. Finally, my husband and I got a small farm at Saint-Blaise-sur-Richelieu and I’m very happy to announce it on this Earth Day! I’m a chef and farmer now! To be continued —-
Ça fait très longtemps que je rêve de cultiver mes légumes et herbes! J’ai grandi dans un petit village où ma mère cuisinait avec des légumes cueillies le jour même. Cuisiner avec les légumes de son jardin me manque beaucoup depuis plus de vingt ans.. Depuis quelques années, je cherchais une opportunité pour réaliser ce rêve. Finalement, mon mari et moi avons eu la chance d’acheter une petite ferme à Saint-Blaise-sur-Richelieu et je suis très contente d’annoncer cette nouvelle en cette Journée de la Terre!! Maintenant, je suis une chef et fermière À suivre!
