APPLE CRUMBLE MUFFINS
Makes 12
FREEZER FRIENDLY
INGREDIENTS
* crumble topping:
* ½ cup (45 grams) rolled (traditional) oats
* ¼ cup (40 grams) plain wholemeal (wholewheat) flour
* 3 tablespoons (60 grams) cold unsalted butter, cut into cubes
* 2 tablespoons (25 grams) brown sugar
* ½ teaspoon cinnamon, ground
* 1 tablespoon runny honey
* 1 tablespoon poppy seeds
* 1 tablespoon flaxseeds (linseeds) OPTIONAL
* 1 tablespoon (white or black) chia seeds
* pinch of salt
* muffins:
* 1¼ cup (190 grams) plain wholemeal (wholewheat) flour
* ½ cup (25 grams) wheat bran, toasted (or an extra 1/2 cup wholemeal flour)
* 2 tablespoons almond meal (almond flour)
* 1 tablespoon rolled (traditional) oats
* 1 tablespoon poppyseeds
* 1 tablespoon (white or black) chia seeds
* 1 tablespoon cinnamon, ground
* 1½ teaspoons baking powder
* ½ teaspoon bicarb soda
* pinch salt
* ¼ cup (50 grams) brown sugar
* ¼ cup runny honey
* ½ cup (125 ml) buttermilk (or natural yoghurt)
* ½ cup (125 ml) brown butter, slightly cooled (or lightly flavoured olive oil)
* 2 eggs
* 1 tablespoon vanilla bean paste
* 2 apples, grated (approx. 1 cup)
* 1 apple thinly sliced, to decorate
METHOD
1. Preheat oven to 180 C (350 F) and line a 12-hole muffin tray with papers. Set aside.
2. To make the crumble topping: Place all of the ingredients into a bowl and using your fingertips squeeze and press until the mixture is combined and resembles wet sand. Set aside in the fridge.
3. To make the muffins: Place the flour, bran, almond meal, oats, poppy seeds, chia seeds, cinnamon, baking powder, bicarb powder, salt and brown sugar into a large bowl. Whisk to combine creating a well in the centre. Cont below...

This smoothie is one of my favorite recipes to make with a group of younger toddlers and is the easiest way to have your little one start helping in the kitchen. Here’s why:
1. Kids practice using a child-safe knife by cutting the banana, strawberries, or whatever fruit/veggies you chose to add. Everything gets blended up in the end so it doesn’t matter what “state” the produce is in when it goes into the blender.
2. It’s quick! Required patience (for kid and adult ) minimal.
3. Includes veggies in a pressure free way. Kids can add ingredients to the blender and gain exposure but they are more likely to try them when blended with all the sweet fruit.
5. Toddlers love to talk about colors. Draw a rainbow or simply label each color as they go into the blender. Take guesses about what color the smoothie will be when it’s all blended.
4. Smoothies are forgiving and versatile. I’m making this with a class tomorrow and we are going to chop up some zucchini to go in there and I often add frozen cauliflower as “clouds.” ☁️ You can use dairy-free yogurt or add almond butter instead.

My new favourite side dish - paprika cauliflower. Have your tried it? Do you like it? I’ve seen recipes for it and it seemed so easy. I gave it a go on the weekend and seriously, you have to try this!!.

Half a head of cauliflower, 2-3 tablespoons of olive oil, 2-3 teaspoons of paprika (you need enough to coat the cauliflower), pinch of salt and pepper.

Break cauliflower into florets and coat with oil then paprika (using your hands coats it better), sprinkle over salt and pepper. Bake in oven at 180 degrees for 15-20 mins or 200 degrees in air fryer for 10-15 minutes.

If you want to cut back on rice and pasta but are sick of cauliflower rice then try this alternative.

LAMINGTON BLISS BALLS
FREEZER FRIENDLY
MAKES 12
INGREDIENTS
* 1½ cups (150 grams) almond meal (ground almonds)
* ½ cup (70 grams) macadamias
* 1 cup (80 grams) desiccated coconut PLUS extra to decorate * ⅓ cup (80 ml) pure maple syrup
* ¼ cup (50 grams) coconut oil, melted and slightly cooled
* 1 teaspoon vanilla bean paste (or extract)
* 100 grams raspberries * 100 grams dark chocolate, melted
METHOD
1. Place the almond meal, macadamias and coconut into the bowl of a food processor and process until finely chopped. Add the maple syrup, coconut oil and vanilla bean paste to the bowl. Blitz again until combined.
2. Take heaped teaspoons of the mixture and using wet or oiled hands shape into rounds. Flatten each round to create a circle. Place a raspberry into the centre of each circle. Fold the circle over the raspberry and roll into a round. Place in the fridge for 30 minutes to set.
3. Dip each bliss ball into melted chocolate, allowing excess to drip off. Decorate with coconut. Place into a tray lined with baking paper and pop back into the fridge until set. Enjoy x
