Crispy BBQ cauliflower, vegan Mac and cheese and Brussels, is this bowl heaven or what?! TO MAKE THE CAULIFLOWER CHECK THE LINK IN MY BIO, instead of using the sauce in the video I just used a BBQ sauce from Trader Joe’s.
To make the Mac and cheese I just took some of Trader Joe’s cashew fiesta dip mixed with almond milk and nutritional yeast. Paired it with some chickpea pasta and yummmm. So easy to make it that way. I am very thankful for chickpea pasta haha.

La mejor tortilla de patatas DEL MUNDO (V-GF) .
O al menos para mí. Recuerdo la primera vez que hice mi primera tortilla con harina de garbanzo, aunque el sabor estaba bien -realmente nunca pensé que pudiera convencerme del todo- la textura era muy poco esponjosa y demasiado densa. Con el tiempo y la práctica la cosa ha ido cambiando. Hoy he querido compartir humildemente mi versión, espero que os guste. ¿Cómo va vuestra semana?

¿Qué necesitas para esta tortilla? (2pax).
✨ 2 patatas grandes.
✨ 1 cebolla caramelizada.
✨ 5 cucharadas de harina de garbanzo.
✨ 1 cucharada de harina de maíz.
✨ 3-4 cucharadas de agua + 3-4 cucharadas de bebida vegetal (un poco más de media taza aproximadamente de líquido).
✨ 1 cucharadita de bicarbonato.
✨ Sal, AOVE, perejil y un chorrito de limón.
✨ Opcionalmente podéis utilizar Sal Kala Namak (que le da un sabor a huevo).
Pela y lava las patatas, después córtalas en láminas muy finas. A continuación, pica la cebolla en juliana.
En una sartén, vierte un chorrito de AOVE y cuando esté caliente echa las patatas, sal al gusto y medio vaso de agua. Cuando el agua hierva, baja el fuego y tapa la sartén con una tapa. Deja que se hagan las patatas, si es preciso, echa un poco más de agua para que no se peguen.
Para la cebolla haz lo mismo, tomate tu tiempo y caramelízala con AOVE y agua hasta que esté melosa.
En un bol mezcla el agua, la leche y unas gotas de limón, mezcla con las harinas y el bicarbonato hasta que se cree una masa homogénea (puede ser que necesites más líquido, la textura tiene que ser líquida).
Añade al bol las patatas y la cebolla y a hacer la tortilla. Vuelve a verter un par de cucharadas de aceite, calienta y vierte la mezcla. Baja a fuego medio, y deja cocinar la tortilla unos 5-6 minutos. Ayúdate de un plato para dar la vuelta a la tortilla y cocina el otro lado.

Imo, the best vegan swap for tuna is to mash chickpeas. When mashed, chickpeas become flaky with a tuna like texture. Recipe
What you need: 1 can chickpeas drained & rinsed, 2 celery stalks finely chopped, 2 green onions finely chopped, 1 garlic clove minced, 1/4 dill pickles finely chopped, 1/4 cup packed basil, 1/4 cup parsley, 1/4 cup vegan mayo, 1/4 cup vegan sour cream, 2tbl water, 2 tbl tahini, 1tsp lemon zest, 2 tbl lemon juice, sea salt/black pepper to taste. What you do:
1️⃣ Mash chickpeas with potato masher/back of fork in a mixing bowl, add chopped celery, green onion, pickles, & garlic, mix well
2️⃣ In a blender, combine rest of the ingredients till smooth
3️⃣ Add dressing to chickpea mix. I wrapped mine in lavash and topped it with some cucumbers that I waffle cut

I’ve been craving these bowls a lot recently. Overnight oats are my favorite during the summer months, but in general they are a very practical way to get in some key nutrients in the morning. People will often talk about fiber, but hey this is your opportunity to get some b12, vitamin d, calcium and protein! Let’s break it down with some recommendations. When prepping oats, it can be advantageous to add fortified plant milks (a great way to get in calcium and vitamin d and in some cases like soy milk you can also get in some b12 and protein too). And that’s just by adding some plant milk to the mix. You can get zinc and magnesium by adding things like pumpkin seeds. Add flaxseeds or chia seeds and reap the benefit of omega 3s. Literally ticking off a lot of boxes with just a couple of simple additions. It’s also way more exciting to eat than an instant packet of oatmeal.

Overnight Oats
1/2 cup rolled oats
1 tbsp chia seeds or ground flax seeds
1 tsp sweetener of your choice (I used Silan date syrup from @soomfoods) or 1 mashed medjool date
Pinch of cardamom
Pinch of cinnamon
Pinch of salt
3/4 cup unsweetened plant milk (I used almond milk)

Combine all ingredients together and set overnight in the fridge. You can leave it in a bowl, place in Tupperware container or do whatever fancy thing you like to do with your oats. Whenever you are ready to serve just top with your favorite fruit and eat it.
What a year this has been. I can honestly say that this has been my best and happiest year in 8 years. From dealing with my dad’s cancer and losing him, to a failed engagement, to college struggles due to my grief, gaining over 100 pounds, moving and moving and moving again, major mental and physical health struggles, an uncertain future and a job that made me miserable to getting healthy and living my best life. I wish I had known the difference that would be made in all parts of my life just by putting my health first. I started with that and the rest just fell into place. I’ll always be grateful for Keto for being the tool that allowed me to get to where I am now. It’s scary to think where I would be had I not found it.
