Who wants a slice of my vegan Choc Chip Zucchini Bread?!? This yummy recipe is refined sugar free as I used @nuviaproducts sweetener (my favourite way to bake healthier sweets!). This recipe is also nut-free and gluten-free!) Have you ever tried zucchini in baked goods? This recipe was perfect for a little bit of Monday Baking for snacking this week. I will pop the recipe below: Choc Chip Zucchini Bread (Vegan, nut-free, Gluten-free, refined sugar-free) • 1 flax egg (1 tbsp of flaxmeal + 3 tbsp of water) • ½ cup of Nuvia baking stevia • 2 cups of gluten-free self-raising flour • 1 tsp of vanilla essence • 1 cup of plant milk of choice • 1 cup of grated zucchini • 1/3 cup of vegan – low sugar chocolate chips 1. Pre-heat your oven to 180 degrees Celsius; 2. In a cup mix the flax egg together and leave to sit a few minutes; 3. In a mixing bowl, add in the flour, Nuvia baking stevia; 4. Grate your zucchini and drain slightly with your hands and add it in the mixing bowl; 5. Mix together then add the plant milk, vanilla essence, the flax egg and vegan chocolate chips. 6. 5 years ago today our world changed forever. Immediately after eating one cashew, Lainey (at the age of 6) went into anaphylactic shock. The sight of your child turning blue in the lips, red boiled body, and unable to speak is something a parent will never forget. Nor is the terror of this experience ever forgotten by the child. Food allergies are not something to be taken lightly. Since entering into this new world, we have all learned A LOT! Life is now more than just food avoidance and food allergies are more than just an allergy. Food allergies carry with them a tremendous amount of anxiety, fear, and isolation. They require immense amounts of preparation, sacrifices, and conversations (both wanted & unwanted). You do what you need to do and stay thankful for it. We were the fortunate ones, having been within 3 miles of a hospital. Many others have been lost. I am so proud of my baby girl for being her own advocate. With a list that includes much more than tree nuts, she is diligent (checking every label) and strong (avoiding every temptation known to man). If anything, I would like this post to serve as a reminder to other parents/coaches/teachers with food allergy children [people] in your life. Be kind. Be patient. Be cooperative. Teach your children to be the same. The awareness and support does not go unnoticed by any one of us. Big THANK YOU to everyone in Lainey’s life who has her back. Do you need a last minute baking idea for this weekend? I have got you covered with this super easy, delicious, #allergyfriendly and healthier for you Strawberry Oat Crumble Slice . Strawberry Oat Crumble Slice (Vegan, wheat-free, refined-sugar-free, nut-free) • 1 ½ cup of quick oats; • 1 cup of buckwheat flour; • 1 tsp of cinnamon powder; • 2 tbsp of sweetener of choice; • ½ cup of melted coconut oil; • ½ cup of homemade strawberry jam; • handful of fresh strawberries Strawberry Jam: • 1 lemon • 2 cups of fresh strawberries; • 1 tbsp of Nuvia sweetener 1. Pre-heat your oven to 200 degrees Celsius; 2. Blend the strawberries in a blender then cook on low heat on the stove with the added lemon juice and sweetener; 3. Store in the fridge for up to 1 week 4. While you make the strawberry jam, mix the quick oats and buckwheat flour in a mixing bowl. 5. Then add the cinnamon and Nuvia sweetener then combine with the melted coconut oil. 6. In a small square tin lined with baking paper, press down ¾ of the crumble mixture. 7. Spread a layer of strawberry jam on top and some cut up strawberries. 8. Then sprinkle the remaining crumble mixture on top and place in the oven. 9. Cheers to 25 I never envisioned my life at 25 the way it is now. Developing multiple life-threatening food allergies in my late teens and early twenties has drastically changed my life and completely spun everything upside down. But it’s important to remember that life is what you make it. YOU choose your attitude, YOU choose what to let affect you and YOU choose to see the positive or negative side of every situation. Five years ago, did I ever envision myself at 25 not being able to eat out at all, having to carry EpiPens with me everywhere, and going through a time-consuming food allergy treatment that takes over my life? No. I had no idea this was going to happen. But, life is all about how you react to things that happen to you. The only thing constant in life is CHANGE. So I took my food allergy journey and decided to find a way to help others going through the same thing and find ways to make a positive impact on the world. I really hope this account is a place where you can feel safe to share your stories, a place where you can get helpful information, and a place where you can connect with others and find support ❤️ That is my ultimate goal with @nonuts4me

Raw Vegan Hazelnut and Chocolate Mini Cheesecakes . Who wants one?! ⠀ It is a good one so save it, print it, share it and most importantly give it a go! You won’t be disappointed ⠀ Vegan Hazelnut and Chocolate Mini Cheesecakes ⠀ Base:⠀ 1/2 cup of almonds⠀ 1/2 cup of hazelnuts⠀ 1 cup of pitted dates⠀ 1 tbsp of water⠀ 1 tbsp of cacao ⠀ Cheesecake Layer:⠀ 1 cup of soaked cashews 4-6 hours ⠀ 6 tbsp of raw cacao powder⠀ 1 tsp of vanilla powder⠀ 1/2 cup of rice malt syrup⠀ 1/3 cup of melted coconut oil⠀ 1/3 cup of roasted hazelnut butter (homemade nutella) ⠀ Melted raw chocolate + roasted hazelnuts to top ⠀ 1. First make some homemade vegan chocolate hazelnut butter by roasting 1 cup of hazelnuts in the oven for 10min at 200 degrees and blending with 1/4 cup of maple syrup, 1/3 cup of cacao and 1/3 cup of coconut oil. (This recipe will make more than you need for the cheesecakes - you can use the leftovers to top them with it or use it for toast/ dipping fruit! ) ⠀ 2. In a food processor blend the base ingredients together then press down into silicon muffin moulds.⠀ 3. Then drain your soaked cashews and blend with the cacao, coconut oil, rice malt syrup and hazelnut cacao butter and the vanilla.⠀ 4. Pour on-top of the raw bases and freeze for a few hours.⠀ 5. No-Bake Vegan Lemon Tart with a raw vegan crust and a lemon curd filling made with @naturescharm sweetened condensed coconut milk. Lemon tart is actually my husband’s favourite dessert and I was happy to be able to make him a vegan lemon tart using the sweetened condensed coconut milk. I prefer simple and healthy recipes and honestly at first I was a little defeated by this recipe as I failed the crust but by making a raw vegan crust it is a lot easier! Oh and my hubby loved it! @naturescharm were the first to create condensed coconut milk. Sonya spent 2 years developing it as she was missing eating condensed milk! They created the first packed condensed milk in the world! - No-Bake Vegan Lemon Tart Crust: 2 cups of raw almonds 2 cups of pitted dates 1 cup of desiccated coconut 1 tbsp of water if not sticky enough 1. Mix the almonds in a food processor until fine then add the pitted dates and the coconut. Blend until it forms a sticky dough. Add water if necessary. 2. Like a tart tray with baking paper and press down the raw base with your fingers. Lemon curd: 1 can of sweetened condensed coconut milk 1 lemon juiced (option to use lemon essential oil too) 4 tbsp of arrowroot powder 4g of agar agar Pinch of turmeric powder to make it more yellow 1. In a pot heat the coconut condensed milk with the lemon juice. 2. Whisk in the arrowroot powder and whisk for a few minutes. 3. Take off the heat then whisk the turmeric powder and agar agar. 4. Pour on top of your crust. 5.
