Recovering from Italian last night - we decided on Northern Chinese food. This place had some hits and misses 1. Gongbao Shrimp- looked great, but missed that vinegar-y taste with a hint of sweet which kinda makes gongbao what it is. 2. Shengjian- even though wifey was trying to explain to me that northern shengjian is a bit different than Shanghai, I was still quite disappointed.. not very juicy nor moist inside. Im used to the ones that shoot soup across the table as you bite in. Again.. at least they looked bomb. 3. Mapo dofu- this dish was setting this place back on track... just enough of the numb-ing pepper to keep you coming back for more — rich and deep flavors. Solid. 4. Roasted duck— we got a half a duck, it was moist and tender— different style to a Peking duck— they didn’t serve the crispy fatty skin separately— but the meat itself got the job done. This classic Sichuan dish “Gong Bao Chicken” #宫保鸡丁 is from Qing Dynasty, and name after Ding Baozhen 丁宝桢，he was the governor of Sichuan Province. One of his favorite dishes.The flavor that holds the perfect balance of salty, slightly sour, sweet with a kick of numbing spiciness(from Sichuan peppercorns) and the aroma of garlic and ginger. (IG story is coming soon) Ingredients: 1 lbs of boneless chicken breasts ( about 2 pieces) 4 Green Onions 10-15 Dried red peppers (depends on your heat level :) 5 thin slices of Ginger 5 garlic cloves 1 tsp Sichuan peppercorns 1/3 cup Roasted peanuts (Store bought is fine, or roast them in the oven for 10-15 minutes, I roasted mine in a dried hot wok.) 2 tsp corn starch For the marinade: 2 tbsp aged soy sauce 1/2 tsp salt 1 tbsp Chinese cooking wine 2 tsp corn starch For the Sauce 3 tsp sugar 1 1/2 tsp corn starch 1 tsp aged light soy sauce 1 tsp dark soy sauce 1 tbsp Chinese vinegar 1. Cut chicken into strips, then in to small cubes. Put the marinade in chicken, marinade at least 30 minutes, over night even better. 2. Heat the wok or pan on high, add about 2-3 tbsp cooking oil, add dried peppers and Sichuan peppercorns, stir-fry until fragrant but not burned. 3. Add chicken and stir constantly, after a few minutes add ginger, green onions and garlic to stir fry until fragrant. Chicken cook through, taste a piece. 4. Add the sauce ingredients in a bowl mix well, then put in the wok stir and toss with the chicken, once the sauce is thicken and shiny, add peanuts mix well. Serve warm~ and spicy! Note: I use the whole dried red pepper, you can cut them open to get spicer taste. For the kids today’s chicken my 5 and 6 year olds loving it so much, not overly HOT for them. But they killed a LOTS of rice with the chicken

Home cooking: an absolutely killer rendition of gong bao chicken, if I do say so myself. I mashed up two recipes (Fuchsia Dunlop and Neil Perry) and produced this winner. The 10 dried chillies and heaped teaspoon of Sichuan peppercorns (I’m in love with the green ones - so fragrant, almost citrus notes, but also numbing) give the tastebuds a whack and a kick.
