Black Spanish and Pink Moon radishes It’s hard to beat a simple radish and dill ferment, it’s one of my favourite ferments and one I always have on hand. Fermenting tones down the heat in radishes which is perfect because these Black Spanish had a lot more spice than I was expecting I was a little panicked with how much my mouth was burning after taking a huge bite out of one like an apple. Definitely won’t be doing that again

Zena è la versione Brada – lenta e selvaggia – di una Gose (stile tradizionale della Germania): di fatto una sua interpretazione barrel aged e leggermente più robusta.

È una birra che abbiamo pensato per l’estate, beverina e dissetante, senza però rinunciare ad una sua complessità.

Il nome è un richiamo alla Val di Zena, piccola vallata in provincia di Bologna nei pressi del nostro sito produttivo, dove vennero ritrovati i resti di una balenottera del pliocene, spiaggiata lì milioni di anni fa.

Si tratta di una birra di frumento con luppolatura nobile tedesca che, a seguito di affinamento dai 6 agli 8 mesi in specifiche botti con contaminazione di brettanomyces e batteri lattici, riceve una speziatura classica di sale (di Cervia) e coriandolo.

La presenza salina stimola il richiamo alla bevuta in una birra estremamente rinfrescante, grazie all’acidità e a una pungenza speziata citrica.
Un bouquet aromatico etereo di frutta gialla e pesca acerba incontra una boccata snella connotata da una croccantezza cereale.
L’impronta della bottaia dona note funky e di legno, arricchendo la birra di profondità e sfumature.

Fermentation isn’t hard because it’s confusing (well maybe sometimes). It’s hard because it requires a lot of patience. And most people are impatient af when it comes to food. I guess what I’m trying to say is you can’t knock it till ya try it. Next time you grab some veg at the store or farmers market, give this lacto fermentation method a shot.
