Ingredients :
2 tbsp olive oil
2 chicken breasts, cut into 1 inch (2cm) pieces
salt, to taste
pepper, to taste
½ cup yellow onion, about half an onion, diced
2 cloves garlic, about 1 tbsp, minced
2 cups chicken broth
3 cups water
16 oz pasta shells
4 cups broccoli, or one head of broccoli
½ tsp cayenne powder
¼ tsp nutmeg
1 cup milk
2 cups shredded cheddar cheese .

In June we planted peas, carrots and heart shaped potatoes in our small garden plot. Water restrictions and warmer weather (almost sounds like Australia ), only the potatoes seemed to have grown. ❤
Waiting for the plants to die, seemed counter-intuitive, but the frosty mornings over the last week finally killed off the plants!
We only got a bucket full and none of them seemed diseased so we'll plant there again next year. I laid a decomposing mulch mix of veggie scraps, tea bags, coffee grounds, hay and poo from the rabbit. Probably it's good for the plot, but mainly for stopping the neighbour's cats, popping in the freshly turned over soil.
Really making it up as I'm going along. I don't want to add anything other than waste from our household, keeping it as organic as they did in the olden days.

LAST DAY OF SCHOOL/WORK
This may not actually be my breakfast today, but it’s pretty much what my breakfasts have looked like all school year long. Whatever I can fit into my mini fridge, whatever I have time to meal prep, quick and as easy as I can make it. This year has been LONG and so exhausting, but I’m still feeling a little sad today. I’m sad to leave the amazing children I’ve had the pleasure of teaching for the past two years I’m sad to leave some of my coworkers and this environment I’ve worked hard to cultivate. But with this sadness comes so much new and exciting change. I can’t wait to start the next part of my journey and I can’t wait to take you guys along with me. So for today, here’s one last school breakfast Hope you guys have a wonderful Thursday!

If you’ve been following along with our stories you know we’re in Port St. Lucie for the week! We’ll be doing a lot of grilling and sharing what we dish up. Here’s a look at the portobello mushrooms we did for lunch with a chimichurri sauce two tips for cooking mushrooms followed by the recipe! Be sure to take us in your creations
*Do not rinse your mushrooms under running water! This messes with the texture of the mushroom (sometimes when people say they don’t like mushrooms it’s because of this). Buy organic and clean your mushrooms with a damp paper towel to remove dirt
*Don’t over/undercook your mushrooms! 3-4 mins on each side for a nice, juicy finish
Chimichurri Marinade
1 head of garlic (peeled and finely diced)
1 bunch of cilantro (just the leaves, finely diced)
4 limes juiced
~3/4 cup of olive oil
Salt/pepper to taste
Mix all ingredients together and allow mushrooms to marinate for at least 10 minutes (FYI we removed the stems but it’s not necessary). Grill 3-4 mins on each side, slice (if desired) and serve!

Aquí les muestro los hongos con salsa chimichurri que hicimos para la comida de hoy. Abajo dos consejos para cocinar hongos luego la receta. Disfruten y claro etiquétanos en sus creaciones!
*No lavar los hongos!! Los hongos siempre se limpian con una toallita húmeda para quitarle la tierra. Si los hongos se mojan demasiado altera la textura de los hongos, es una de las razones por la cual la gente dice que no come hongos! *cocinar (en la estufa o en la parrilla) por solo 3-4 minutos para no sobre cocinar
Salsa Chimichurri
1 cabeza de ajo (pelado y bien picado)
1 manojo de cilantro (sólo las hojas bien picaditas)
Jugo de 4 limones verdes
3/4 taza de aceite verde
Sal/pimienta al gusto
Mezclar todos los ingredientes y marinar los hongos (por lo menos 10 minutos). Cocinar por 3-4 minutos en cada lado, cortar (si desees) y servir!
