DAIRY FREE RANCH CHICKEN and CUMIN GARLIC GNOCCHI hit the spot last night. It came together in no time and tasted amazing. Thanks @healthymoodsf For the gnocchi inspo. I ended up dipping the gnocchi in some homemade guacamole too...last minute decisions. ‍♀️ • • • Deets: chicken: 2 large chicken breast in a marinate of 1/2 cup @kitehillfoods yogurt, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1 tablespoon fresh dill, 1/4 teaspoon pepper...let marinate for 1 hour, then bake on 400 for about 8 minutes then take out and pour over 1-2 tablespoons of coconut aminos and bake for about 2-3 minutes until done. Gnocchi: thaw a bag of @traderjoes cauliflower gnocchi and heat 1.5 teaspoons ghee over medium high, add the gnocchi and sauté for about 5 minutes then add 1 teaspoon paprika, 1 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt and sauté for a bit longer. By: @laughingspatula Serves: 4 —— INGREDIENTS: 1 1/2 pound ground chicken 95/5 1 small chopped red pepper about 1/2 cup 1 chopped anaheim pepper green bell would work as well 1/2 lime, juiced 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/4 cup bread crumbs - optional use if your ground chicken is too moist . Chili Seasoning: 1 teaspoon chili powder 1 teaspoon ground cumin 1/4 teaspoon salt 1/8 teaspoon ground pepper . Avocado Salsa: 1 large ripe avocado, smashed 1/2 lime, juiced 1 large pinch of chili seasoning —— INSTRUCTIONS: Combine all chili seasoning ingredients in a small bowl and set aside. Combine all burger ingredients and shape into 4 patties. (if you find your ground chicken a little on moist side, add 1/4 to a 1/3 cup of bread crumbs). Season the top of your burgers with 3/4 of the seasoning mix. Saving the remainder for your avocado salsa. Heat grill pan to medium high heat and cook burgers for about 4-5 minutes on each side or until cooked through and meat thermometer reaches 165 degrees. Combine mashed avocado, lime and remaining seasoning. Taste. More salt, pepper, spices? . Cover and store in fridge until ready to use. The lime will keep it nice and green.
