DINNER BOWL . .
Last nights dinner: a beautiful bowl stuffed with so much healthy goodness♀️: Oven baked sweet potato with mixed greens, spicy roasted chickpeas (I used cayenne pepper and paprika powder), steamed broccoli and a somewhat wild sauce of avocado, mustard, ginger, garlic, chilli and water. This was a bit experimental but it turned out delicious! I might make give this a separate post! I have to admit I am absolutely addicted to sweet potatoes (and squashes) lately. RECIPE

BROWNIE - 6 fresh dates
- 0.5 cup coconut sugar
- 0.5 cup sweet potato
- 0.5 cup coconut flour
- 4 tbsp coconut oil
- 1/2 tsp salt
- 1 cup cacao powder
- 0.5 cup almond milk
- 1/2 tsp salt
- 4 tbsp flax egg (mix 1 cup water + 4 tbsp flax seeds. Take 4 tbsp of the liquid to the cake)

FROSTING
- 100g vegan chocolate
- 4 tbsp coconut cream .
.
HOW TO
1. Start with cutting a sweet potato into cubes. Boil until softens.
2. Mix all of the ingredients in a food processor.
3. Pour the batter into a mold.
4. Heat in the oven for 25 minutes (175 degrees)
5. Melt 100g vegan chocolate and add the coconut cream.
6. Pour over the cake and refridgerate for 1 hour.
