one of my fav vegetarian meals to make for the week is this incredible one pot Moroccan chickpea quinoa salad bc it takes 20 minutes to throw it all together — and it’s lovey served warm or cold.
i made this recipe for my mom and grandma a few months ago but jazzed it up a bit with the addition of peas, cilantro and chopped toasted pecans it was truly incredible, full of plant based protein and great for meal prep!

¡Esta ENSALADA de pollo con quínoa te ayudará a comer RICO sin romper la dieta!
PORCIONES: 4
INGREDIENTES:
- 2 pechugas de pollo enteras
Para la marinada:
- 1/4 de taza de aceite de oliva
- 2 cdas de sazonador cajún
- 2 cdas de pimienta cayena
- 1 cdita de polvo de ajo
- 1 cdita de cebolla en polvo
- 1 pizca de sal - 1 pizca de pimienta
Para la vinagreta:
- 1/2 taza de jugo de naranja
- 3 cdas de jugo de limón
- 1 cdita de hojuelas de chile
- 1 cda de cebollín
- 1/2 taza de aceite de aguacate
- suficiente sal y pimienta
Para la ensalada:
- 2 tazas de quínoa remojada y cocida
- 1 taza de elote amarillo
- 1 taza de ejotes blanqueados
- 1 taza de espárragos blanqueados y cortados en rodajas
- 1 taza de chícharos blanqueado
- 1 taza de queso de cabra desmoronado
- suficiente lechuga
- suficiente jitomate en cuartos
PREPARACIÓN:
1. Coloca el pollo en un bowl y marina con el aceite, el cajún, la pimienta cayena, el ajo en polvo, la cebolla en polvo, la sal y la pimienta. Reserva.
2. Calienta una parrilla a fuego alto y cocina hasta que estén completamente cocido. Reposa y corta.
3. Para la vinagreta: mezcla el jugo de naranja, el jugo de limón, las hojuelas de chile, el cebollín, el aceite de aguacate, y sazona con sal y pimienta. Reserva
4. En un bowl, mezcla la quínoa con el elote, el ejote, los espárragos, los chícharos, el queso de cabra, adereza con la vinagreta y mezcla.
5. Sirve en un plato hondo, acompañado de hojas de lechuga, la pechuga de pollo y jitomate.

I was having a slight nervous breakdown yesterday thinking my ankle was broken but luckily it’s just a sprain so we are back in business. I do have to wear this cute ankle boot for a couple days but I think I can definitely spice her up with some glitter glue? What do you think?
Anyways, I didn’t get back from the doctor until late so I was starving. My girl Nicole @kalejunkie posted about a lemon quinoa on her feed which reminded me about a lemon kale quinoa pilaf I used to make all the time in college but forgot completely about. I posted the recipe below so you can also make it for yourself. Let me tell ya: it’s a good one. ANDDD if you make it, make sure you tag me in the photo bc if you don’t I’ll miss it. The deets: cook 1/4 cup rinsed quinoa in 1 cup water for about 15 minutes or until the liquid is absorbed. 5 minutes before it’s done, add 1 cup chopped kale and allow to wilt. In your serving bowl, mix together 1 chopped scallion, 1 teaspoon sesame oil, the juice and zest of 1/2 lemon, and a handful of crumbled feta and fresh parsley (if ya got it). Add the kale quinoa mixture to the bowl and toss to coat in the dressing. Top with sunflower seeds and other goodies #thecuttingveg #eatrealfood #yolkporn .
