Gluten-Sugar-Free VEGAN Banana Bread✨ . . מתכון בתגובות⬇️ . I recently did a Nutrition Response Test at @healing.arts.nyc because of my facial acne, and the results were shocking! Not only I had to stop eating soy products (including tofu!!!) but I had to also stop eating wheat (among other things). . This fact made me think of new recipes to suit my new diet. I have a sweet tooth! And I know that I can’t survive without something sweet to grab during the day. So I’ve tried to find alternatives to the things I love. . One of them was THIS banana bread. It’s not the most photogenic thing, I know ‍♀️, but oh dear, it tastes like heaven . Ingredients: ✨ 3 tbs of chia seeds soaked in 9 tbs of water for 10 minutes. ✨350g ripe banana (about 3 bananas), mashed. ✨ 2 tbs maca powder (I used @anthonysgoods ) ✨ 1 3/4 cup almond flour (I used @bobsredmill ) ✨ 1/2 tsp baking soda ✨ 1/2 tsp cinnamon ✨1/4 tsp nutmeg ✨ 3/4 cup yummy healthy stuff such as nuts or raisins(I add mulberries, goji berries, and coconut chips). . How to make: Preheat your oven to 356 F. Mix the soaked chia with the mashed banana in a bowl or blender/food processor. Add all the other ingredients to a blender/food processor except the nuts. Pour batter into oily pan. Add the nuts/raisins and mix. Tried out my vegan, gluten-free flatbread on my Monday clients today. Cooked it up like naan and served it brushed with fresh garlic butter alongside my new saag paneer made with seasoned tofu and creamy spinach sauce. So good. Also on the menu Heirloom tomato basil bisque, chickpea mushroom basil burgers with caramelized onions, morel, kale, purple asparagus pasta with toasted walnuts, and smoky whole roasted mushrooms with collard and red bean yellow rice. It’s really hard for me to believe that I cook all of this and clean up in 3 hours or so, but somehow I do. For everyone who asks me how to get better at cooking (more versatility, unique flavors, faster and more efficient) the answer is simply to cook more things. We know that we just posted about these No-Bake Turtle Brownies from @themindfulhapa but they are just too good to not look at again ⠀ —⠀ NO BAKE TURTLE BROWNIES - vegan, gf, df, grain free, refined sugar free, paleo⠀ ⠀ Base - Raw Brownie⠀⠀ 1 cup pitted medjool dates⠀⠀ ⅓ cup almond flour ⠀⠀ ¼ cup + 1 tbsp @rodellevanilla unsweetened cocoa powder⠀⠀ 1 tsp @rodellevanilla extract⠀⠀ 1 cup roasted pecans⠀⠀ 2 squares, @theochocolate 70% dark chocolate⠀⠀ ⠀⠀ Filling - Salted Chocolate Caramel⠀⠀ 1 cup pitted medjool dates ⠀⠀ ⅓ cup coconut cream ⠀⠀ 1 tbsp @rodellevanilla cocoa powder⠀⠀ 1 tsp @rodellevanilla extract⠀⠀ ¼ tsp salt⠀⠀ ¼ cup roasted pecans⠀⠀ ⠀⠀ Topping - Chocolate Ganache⠀⠀ 6 squares, @theochocolate 70% dark chocolate⠀⠀ 1 tbsp coconut oil⠀⠀ ¼ cup coconut cream⠀ —⠀ 1. Line a 8x4 loaf pan with parchment paper and set aside. ⠀ 2. Make your raw brownie base - in a food processor, blend together dates until they form into a ball. Next, add in your almond flour, unsweetened cocoa powder, and vanilla extract until combined. Add in your roasted pecans and blend together - mixture should stick together easily when you press between your fingers. Finish by pulsing in the x2 squares of @theochocolate.⠀ 3. Move raw brownie base to the parchment-lined loaf pan and flatten to a single layer. ⠀ 4. Make your salted chocolate caramel - in the same food processor, blend together dates until a ball forms. Add your coconut cream, cocoa powder, vanilla extract and salt until you have a smooth consistency. Finish by pulsing in your roasted pecans until only small pieces remain. ⠀ 5. Add the salted chocolate caramel layer on top of the brownie layer, using a spatula to spread in a single even layer. ⠀ 6. Make the chocolate topping - in a microwave-safe bowl, melt the 6 squares of dark chocolate with 1 tbsp of coconut oil. Once chocolate is melted, stir in your coconut cream. ⠀ 7. Pour chocolate coating over the salted caramel layer in the loaf pan, again, using a spatula to spread in a single even layer. ⠀ 8. Continuing with the series of recipes I made in the past that I’m currently craving here is a vegan fried chikn & waffle sandwich, featuring the vegan delicious chikn from @maywahnyc . . For this recipe I dredged slices of the vegan chikn in aquafaba and breadcrumbs, then fried them of course. I made savory cornmeal waffles & sandwiched the fried chikn, avocado, yuba bacon, and topped with really good maple syrup . . While fried chicken and waffles each have roots earlier in American history, the dish as we know it was crafted and popularized in Harlem with Wells Supper Club in 1938 - top jazz musicians (including Sammy Davis Jr. and Nat King Cole) would stop by after shows to grab a meal, “too late for dinner and too early for breakfast”...so they enjoyed this meal which had a bit of both. The dish became a nationwide trend that still exists today — I wanted to create a version of this with plant ingredients that celebrates this history!
