Baked vanilla donuts with raw blueberry icing by @panaceas_pantry 1 1/2 cups (190g) plain flour. 1/2 tsp fine salt. 1 tsp (5mL) baking powder. 1/2 cup almond milk. 2 tsp apple cider vinegar (ACV). 1 tsp vanilla extract. 1/2 tsp ground turmeric. 1/3 cup coconut sugar. 2 Tbsp olive oil. 3 Tbsp Aquafaba. Method. 1. Preheat oven to 180 degrees C, and set aside a donut pan. 2. Which auqafaba for a few minutes until light and fluffy, set aside. 3. In a large mixing bowl, add ACV and milk. Set aside to thicken for a couple of minutes, then add remaining wet ingredients (vanilla, oil, sugar). Mix to combine. 4. Sift dry ingredients (flour, baking powder, salt, cinnamon and turmeric) into the bowl and mix together. Finally, fold through Aquafaba, then spoon mixture into the donut holes (to 3/4 full). Smooth down with a wet finger. 5. Bake 9-12 mins, then allow to cool for 10 mins before inverting onto a wire rack to cool. To make the icing, blend; 1 cup macadamias, 1 Tbsp lemon juice, 1/3 cup blueberries, 2 Tbsp pure maple syrup and 2 Tbsp coconut oil. Blend until VERY smooth, then dip cold donuts in. Enjoy! Xx

Stir fry lotus root with pine nuts by @woon.heng ❤️ . Recipe Ingredients ~ 1 medium lotus root ~ 1/2 cup of sugar snap peas, washed and dried with paper towel ~ 1/2 cup of beechnut mushrooms/any mushrooms of your choice, preferable low moisture content ~ 3 tablespoons dry roasted pine nuts ~ 1 tablespoon light soy sauce/coconut amino (adjust based on the size of the lotus root) ~ sesame oil and avocado oil ~ salt to taste . To prepare lotus root break the root at nodal intersections into individual parts and cut ends off. Rinse tuber thoroughly with cold water. Using a peeler, peel off outer layer, and slice it thinly, about 3 mm thick. You may see strands of sticky threads when cutting which shows that the lotus root is fresh. Dry lotus root with paper towel. In a heated pan with 2 tablespoons avocado oil, stir fry lotus roots for 2-3 minutes, then add sugar snap peas, mushrooms, pine nuts and soy sauce. Cook for another 3minutes until mushrooms are thoroughly cooked. Adjust seasoning based on your preference. Stir in 1 teaspoon sesame oil and garnish with sesame seed before serving with rice. *If using soy sauce, sprinkle a little sugar to balance the taste (optional)

Creamy Broccoli Pasta by @hello.kalin Recipe: Ingredients 1 box pasta shells⠀ 1 large head of broccoli, cut into florets and steamed until very tender⠀ 3 chopped garlic cloves⠀ 1/4 cup of veggie broth for sauteing OR 4 tbsp avocado or olive oil⠀ 1/2 tsp red chili flakes⠀ 1/4 - 1/2 cup vegan Parmesan⠀ ⠀ Instructions:⠀ 1. Cook pasta according to directions, reserving 1/2 cup of pasta water. 2. Heat skillet to medium. Add veggie broth (or oil) along with garlic and red chili flakes. Cook for a couple minutes, taking care not to burn. Add more broth if using & needed. ⠀ 2. Add broccoli, stirring and breaking down into small pieces and combine well with garlic and chili flakes. This will take a few minutes. ⠀ 3. Add pasta to skillet and toss well to coat. ⠀ 4. Add the Parmesan and the reserved pasta water bit by bit until a sauce has formed and pasta is well-coated.
