Fried Tofu and Vegetable Spring Rolls!

Recipe: Makes 15 spring rolls
For filling
1 tbsp oil
2 cups raw shredded carrot
1 cup thinly sliced green beans
1 cup raw shredded cabbage
1 onion, thinly sliced
2 tbsp spring onions, chopped
3 cloves garlic
1/2 tsp salt
1 tbsp oil
2 blocks extra firm tofu (around 240g each)
1.5 tbsp soy sauce
1 tbsp mushroom soy sauce (for color, optional)
For wrapping and cooking
15 round flour wrappers
Neutral cooking oil for frying
Sweet chili sauce for dipping (or any dipping sauce of choice)
Small bowl of room temperature water
Preparing the filling
Heat a large pan. Add the oil then sauté the onion and garlic. When cooked, add in the vegetables and season with salt. Mix well and cook for 8-10 minutes over medium heat until the vegetables are cooked through and water has seeped out of the vegetables. Remove from the pan.
Depending on whether there is a lot of liquid, you can strain the vegetable mix.

Avocado, Spinach and Black Bean Quesadillas! by @starinfinitefood Recipe: 2 almond tortillas heated up on medium high in a pan sprayed with avocado oil, (heat the spinach in the same pan while the tortillas are cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any plant cheese or your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so.
Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons of chipotle sauce (or any hot sauce if your choice). Tag a friend in the comments who’d totally love this recipe!

For the fries
4 large baking potatoes
11/2 tablespoons olive oil
salt & pepper
a sprinkle of paprika
Instructions
Preheat oven to 400. Wash potatoes leaving skin on (you can peel them if you prefer).
Fill a bowl with cold water. Slice potatoes into 3-4 slices length wise and then into strips.
Let potatoes soak in cold water for at least 30 minutes (this removes starch from the potato resulting in crispier french fries). Remove from water and pat dry.
Toss with oil and seasoning.
Bake for 30 minutes. Turn fries and bake for an additional 10-15 minutes.
Guacamole
3 avocados
1 firm tomato, finely diced
1/2 white onion
1/2 cup chopped cilantro
2 tbsp fresh lemon or lime juice
Optional salt and pepper to taste.

TERIYAKI TOFU
Serves 2-3
INGREDIENTS
1 14 oz firm or extra firm tofu, pressed
½ cup corn starch
1 tsp salt
½ tsp white pepper
½ tsp ground ginger
1 12 oz bottle of your favorite vegan teriyaki sauce, or homemade if that’s your jam
3 tbs Oil
DIRECTIONS
Preheat the oven to 375
Cut the tofu up into ½ inch cubes.
Mix together the corn starch, salt, ground ginger, and white pepper on a large plate, and toss tofu in the mixture, shaking off excess
Heat an oven-safe skillet over medium-high heat and when its nice and hot add 3 tbs oil. Let that heat up for a minute then add tofu cubes.
Cook for 5 minutes, flipping halfway so it gets a nice sear on both sides. Off the heat, and pour most of the teriyaki sauce on the tofu, reserving about ½ cup for serving. Flip the tofu in the sauce so it gets nice and coated, then place in the oven.
Bake for 15 minutes, remove from the oven, flip each piece of tofu, spoon some of the sauce in the pan onto the tofu then return to the oven, bake for another 10 minutes and serve!

Cheesy Vegan Pasta with Cannellini Beans & Greens by @cookingforpeanuts Easy and delicious!
Recipe
Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum!
