Almond Butter Cups
Remember that homemade almond butter I made a few post back? Welllllll I put it to good use and oh man was it worth it! Everything is definitely better homemade!
You can make the chocolate self made or just use a bar of dark chocolate with a little bit of coconut oil. (I did mine half self-made chocolate and half store bought).
-Line a baking tray with silicone molds. Using a spoon, pour just enough chocolate to cover the bottom of the molds (about 1/2-1 tbsp). I like to keep the layer thin. Cover the tray with foil and place it in the freezer to set for 15 minutes.
-Once the first layer was set I added my homemade almond butter. Make sure to flatten it out well onto the chocolate. There should be a little bit of chocolate around the edges showing through.
-Using a spoon, pour remaining chocolate evenly into each mold until the almond butter filling is covered (about two spoonfuls each). The top should be flat and smooth. Cover tray and place in freezer to set for an hour.
-Once the almond butter cups have completely set, remove the final almond butter cups from the mold. Store them in an airtight container in the fridge for up to a week or in the freezer for up to a month.
-Enjoy!
