From Charles Dagand of the L'Octavin duo. Yavol is a blend of all the allowed grapes in Jura, namely Savagnin, Chardonnay, Poulsard, Trousseau and Pinot Noir, all from the same single site. They are all co-fermented on skins and bottled unfined, unfiltered with no added SO2. Tasted in Kimura, the 2016 needed 10 minutes in the glass to shake off the slight funk to reveal fresh citrus and red fruits aromas.
