Along with Keller and Wittmann, Dönnhoff is among my top 3 favourite German Riesling producer. From the Nahe valley, the father and son team of Helmut and Cornelius have been producing outstanding dry Riesling with the GG Hermannshöhle as its crown jewel. Tasted in Zalto White, I opened the 2016 a day in advance. On the nose it showed citrus, white stone fruits and stony aromas. A full and intense Riesling with good complexity and mineral tension. One of my favorite kind of tastings is sitting down with the right person, learning about each wine, the people who make it, and the story behind the label. A tasting with Holly from Correlation Wines checked all the boxes and more! . . This wine is brought to us by Wes Steffens, who began his career in the culinary arts working with chef Keller at the French Laundry. Wes then went on to intern at the famed Harlan and BOND Estates and joined their winemaking team for 4 years. All of this experience brought him to lead his family’s estate on Spring Mtn, Vineyard 7&8. . . Through the past several years, Wes and family have made lasting relationships with the people around Napa Valley and expanded their portfolio by creating Correlation Wine Company. With winemaker Martha McClellan, they produce a Sauvignon Blanc, Rosé, and Cabernet Sauvignon. During our tasting with Holly at the Wine Thief downtown, we were greeted with some of the best cheese and charcuterie to accompany the wines from Contimo Provisions. . . We tasted the 2018 Sauvignon Blanc (fermented in one time use French Oak and aged for 6 months before bottling), the 2018 Rosé of Bordeaux varietals dominated by Cabernet Sauvignon, and the 2014 Cabernet Sauvignon (aged 26 months in 70% new French Oak). All of the wines are structured with a lengthy finish and will hold up very well when pairing with food. Which I guess isn’t surprising after learning of Wes’ background in the Culinary industry! . . With the quality of these wines, I would expect higher prices. So I was very surprised to find the Cabernet selling for $95/bottle. Just another reason to love this brand! If you get a chance, make an appointment with Holly to taste these wines. Or stop by the Wine Thief (next to the Oxbow Market) anytime to enjoy the Correlation portfolio!

Following the Grand Marques we drank the wines from Henri Giraud, a house that works with 10 hectares of owned vineyards and 15 hectares belonging to family and friends. Fût de Chêne MV10 - blend of Pinot Noir and Chardonnay from Aÿ from multiple vintages and raised in oak. Showed fresh and ripe orchard fruits and spices notes. Argonne 2004 - named after the Argonne forest where the oaks that is used to raise the wine are from. A Pinot Noir dominated blend with some Chardonnay, the 2004 spent 8 years on its lees before being released. This is showing aged autolysis notes already with ripe orchard fruits, citrus and honey aromas. Full and intense. Despite the alluring nose , the wines were again somewhat of a letdown, especially when it warms up where the roundness and dosage make up seems to take away a lot of the tension and vitality. #HenriGiraud

It’s been awhile, so let’s play another round of “what’s in my glass?!” Here are your clues: 1) This grape is from the Languedoc-Roussilon region of France, but is now more commonly found in California than its birthplace. 2) It is light in alcohol and made in a style similar to gamay of Beaujolais...people used to actually nickname it “Napa Gamay!” 3) The varietal pairs well with salty food like fried chicken wings or charcuterie. . . Thoughts/guesses?! I’ll reveal tomorrow in my stories!

Happy Monday! Last night had an impromptu dinner with my fam and had this lovely little lineup. This fit perfectly with my theme of treating myself on Sunday nights to ward off the scaries! The Sauvignon Blanc is becoming one my favorites I’ve had. The 2011 Foxen Syrah was drinking wonderfully, great fruit and spice, very well made wine with some age on it. 2011 Rapid Roy, which is a Primitivo blend was also just wonderful and paired very nicely with the spicy tacos we had. Perfect way to end the lovely weekend! 2006 Chateau Pavie . . Pavie is widely acclaimed as one of Bordeaux’s greatest terroirs, of largely limestone and clay soils. Brilliantly situated with a sunny, southern exposure and exceptional drainage, Pavie potentially rivals nearby Ausone, the oldest and possibly the most famous estate in Bordeaux. Pavie’s other nearby neighbors include, Pavie-Macquin and Troplong-Mondot to the north, Larcis-Ducasse to the southeast and La Gaffelière and Saint-Georges Côte Pavie to the west. Until 1978, previous owners rarely produced great wine, but of course that all changed with the acquisition of the 92-acre, single vineyard by Chantal and Gérard Perse. In short, they dramatically raised the quality. Currently, the vineyard is planted with 60% Merlot, 25% Cabernet Franc and 15% Cabernet Sauvignon, but the actual blend for each vintage tends to possess slightly higher amounts of Merlot. A perfectionist, owner Gérard Perse is flexible with the percentage of new oak, as well as how long the wine is aged in cask. Great vintages can get 100% new oak and spend up to 32 months in barrel. Lesser years are bottled after 18 months and see at least 30% less new oak. There is no fining or filtration. The resulting wine has been considered one of the superstars of Bordeaux since 1978.

2012 Brunello Di Montalcino @biondisantigreppo . . Biond-Santi remains a beacon for traditionally made Rosso and Brunello di Montalcino.The Greppo vineyards of the Biondi Santi family date back to the 1800s. Clemente Santi, nephew of Giorgio Santi, was the first to create red wines suitable for ageing, and his oenological techniques learnt through agriculture, chemistry and science were far more advanced than his peers. Clemente’s knowledge was passed on to his nephew Ferruccio Biondi Santi, who skilfully continued to run the Greppo estate, and managed to keep production running after the First World War. In 1932 he was described as ‘the inventor of Brunello’. The estate has been passed down through the family to this day, and is currently managed by Franco Biondi Santi, along with the help of his two children, who will eventually take on the business themselves. Brunello del Greppo now has twenty five hectares dedicated to its production, and the traditional agronomy and cellaring practises are still used to give this grape its character and quality. Biondi-Santi harvests early. The wines are subject to a long maceration period, in steel for the straight Brunello, and oak for the Riserva, and are then aged in large oak casks.
