@ridolfimontalcino Rosso di Montalcino 2017 --------- Il territorio di produzione del vino Rosso di Montalcino DOC, corrisponde all’area del comune di Montalcino in provincia di Siena e si trova nella Toscana sud-orientale a 40 chilometri a sud della città di Siena. Negli anni ’60 si pensò di inquadrare questo vino nell’ambito di una denominazione di origine e la prima idea fu di designare questo vino come “Rosso dai Vigneti di Brunello”. Successivamente il vino è stato designato come “Rosso di Montalcino”, nome che si è radicato proprio per essere immediato e legato al territorio. La DOC Rosso di Montalcino è stata creata nel 1984 con lo scopo di ottenere vini di qualità a partire anche da uve provenienti da vigneti più giovani di impianto, creando un nuovo stile, più fresco e con meno sfumature dovute all’affinamento in legno. Il Rosso di Montalcino non può essere immesso al consumo prima del 1° settembre dell’anno successivo all’annata di produzione delle uve. *degustato con @coravin_it ------- Vitigno: 100% #sangiovese Vinificazione: le uve diraspate e pigiate sono fatte fermentare in tini di acciaio. Macerazione della durata di circa 50 giorni. --------- Rosso rubino trasparente, con lievi riflessi granati. Fruttato al naso, con sentori di prugna, ribes e ciliegia, seguiti da note speziate di liquirizia. Il sorso risulta morbido, fresco, ben equilibrato, di buona persistenza con un ritorno di frutta sul finale . . ‍WHEN I PRETEND TO BE A CHEF‍ ———————————————————————— Last evening I played the chef, and I passed some hours in the kitchen The result was this duck breast with asparagus and forest fruits sauce ———————————————————————— I chose this dish because it was suggested as a good pairing with the bottle I wanted to uncork: a Bobal from Utiel-Requena. Bobal is a grape widespread in (Comunidad Valenciana, Murcia) (Roussillon) (Sardegna, where it it is called ‘bovale’). Originally bobal comes from UTIEL-REQUENA DO, where it is considered native. Here vineyards count more than 90% of this grape and the homonymous wine is often obtained with ‘doble pasta’ that means fermentation and maceration with twice the normal amount of grape skin and pulp, resulting a wine with important concentration and color. You may know the variety #xarello but did you know its sibling, a mutation with slightly ruby-red skins, called xarel•lo vermell ("red xarel•lo")! It is an old variety and was also known as Cartoixà de Marina. It gives full bodied #rosewine with good structure typical for the xarel•lo but with even more wide range of aromas, between them wild strawberries , and velvet touch .
