LONG POST ALERT
Nearly 1 year ago to the day, I packed up my life in Korea into 2 tiny & ventured into the WILD UNKNOWN.
.
My first big leap was to leave my comfy job at the end of 2016 & give myself space & permission after my heart was broken, my family fell apart & I had been studying the idea of “mini retirements” and “early retirements.”
.
I had worked my tail off, bought rental properties, & decided to LEAP into the giant unknown. It lead me to Korea.
.
And 1 year ago, I once again said goodbye to everything I knew & took the LEAP again.
.
Some days are extremely hard & long. Some days I fly to exotic places & find all the best in #glutenfreeeats It’s not lucky, it’s not easy, but always worth it.
.
And one thing remains: I’m addicted to talking to #entrepreneurs & BIG thinkers. Hearing their stories. Figuring out how to release my limits. Because after all if you fight for your limitations you get to keep them‼️
.

What’s a dream you have now that we can encourage you in
Okay maybe not the prettiest meal but it sure hit the spot today. I was able to prep it while Sadie napped earlier so all I had to do was heat it up for dinner
.
I’ll call this a simplified Shepard’s Pie. Recipe ⤵️
.
• 1 lb ground lamb (can sub in beef)
• 1 TBSP tomato paste
• sprinkle of gluten free Worcestershire sauce
• 1 bag frozen corn
• 1 bag frozen peas and carrots
• 4-5 potatoes
• 1-2 tbsp butter
• splash of almond milk (or dairy milk)

Brown lamb in cast iron pan. Once the meat is browned add in the tomato paste and sauce. Add meat to a casserole dish or any large dish.
Cook frozen peas, carrots, and corn. Place on top of cooked meat in casserole dish.
Bring water to boil and boil potatoes (skins removed). Once the potatoes are soft, remove from water and mash with butter and milk. Scoop and layer on top of veggies.
Enjoy as is or reheat later.

⚕️SYMPTOMS OF CELIAC VS. NCGS⚕️

Lack of access or ability to afford health care is extremely common. I frequently get DMs about people struggling to afford to see a doctor and trying to self-diagnose.
.
“How can I tell if it’s celiac disease or non-celiac gluten-sensitivity, the symptoms are so similar?” - I am often asked.
.
Here’s why this is such a problem, you can’t know WITHOUT accessing a doctor and paying for testing. Not to mention eating gluten for 6 weeks before testing. Being able to access a doctor is a PRIVILEGE that not everyone in the US has.
.
Notice how the only symptom that is celiac specific is small intestinal damage? Aside from that, people with NCGS and Celiac often have overlapping symptoms.
.
Which is why (and I’m going to sound like a broken record here) we need to support each other and unite! We all suffer when we eat gluten, we are stronger together, and it’s pretty much not a choice for any of us when it comes to avoiding gluten because symptom wise, it wreaks havoc.

What’s symptoms do you struggle with most from gluten exposure

It’s important that it’s widely recommended not to go GF until you are tested for celiac. This post is not meant to diagnose or take the place of medical care.
As always this post may not encompass all symptoms though I did do my best to get most on her, I only have so much space on an insta post.
MONDAY CHECK-IN: Let’s be honest with ourselves this morning.. how’s your stress on a scale of 1-10 It’s not always easy to sit down and evaluate what’s actually going on in our heads. Personally I don’t like being in touch with my feelings. I push away negative emotions until they build up. ((Maybe that’s why I’m anxious half the time. ♀️)) If your answer is 5 or more, allow yourself time this morning to check in and work through these feelings. Take FIVE long deep breathes and tell yourself this is going to be a GREAT week!! ✨ P.S.
