Pu'er Bordeaux from @rishitea . . . . . . . . . . . . . . . .This tea has me so excited. I honestly don't remember the last time something shocked me this much. I expected a typical berry flavor from this tea, and let me tell you. I was wrong. This tea was rich and floral and honestly tasted very much like a Bordeaux wine, with an incredibly smooth mouth feel. I steeped and re-steeped it at 200° several times, and it was delightful until the last drop. It started out a gorgeous burgundy, and with each steep it got lighter, until it was just pink. The Smell of Harvest!! Winemakers all over the Northern Hemisphere are gearing up for the most sensational time of year. Long days, hard work and celebration seeing the evolution of the most beautiful transformation on earth. From the vine, grapes are hand picked, sorted, crushed to juice, added yeast (often with Saccharomyces cerevisiae) and fermented often over 10-14 days. During this time a myriad of reactions take place as natural sugar is consumed by yeast transforming fructose to alcohol this purely natural process creates the most exquisite aromas from tropical to rich forest berries to stewed fruit and baking spice. This newly fermented wine, will often be stored away in wooden oak barrels to soften, mature and develop extra complexity. The intimate time (generally 1-2 years) that a wine will spend in cellar in contact with the wooden barrel will invite subtle flavors of vanilla, nut, cedar, tobacco and a further imparting of warm baking spice. 2-3 years after harvest, a wine is masterfully bottled, as sommeliers we encourage you to identify and appreciate the minor nuances of any wine as it tells a poem of the winemaker, their personality and that of the region and climate in which it was grown. Apart from the romance and story of the wine, you as the consumer need to enjoy the taste. Too fruity, too spicy, too dry, too sweet only Your personal palate will know. Grape clusters develop almost all of their flavor, distinct color and aroma during this purely natural evoluion that takes place on vines all across the Northern hemisphere. 2018, particularly in California has been an extremely warm vintage continuing a 5 year long dought. Warm condition will excellerate ripening and the result will be exceptionally rich and expressive wines.
