For this loaded poke bowl add some smokey + buttery salmoncubes, substituted in seasoned cauli rice for the rice, and served it up with a ton of fresh veggies and fun toppings.

This is as easy as 1-2-3: 1: Base, 2: Protein, and 3: Toppings.
.
INSTRUCTION .
1.I started with a base of cauli rice. I like to add about 1/2 tsp of fish sauce and 1/2 tsp of sesame oil to season the rice and add flavor. I hid some arugula somewhere under there too.
.
2.Next is your protein source. You can use any type of sushi-grade, smoked, or even cooked fish. I used salmon cubes which were some of the best smoked salmon I’ve had in my life. I tossed the salmon with a little bit of chipotle mayo and soy sauce for some additional lava.
.
3.And finally, its all about the toppings. Here I added 1/2 avocado, some sliced radish, sliced jalapeño, fresh cilantro, pickled ginger, sesame seeds, and some fleur de maviar, which added a really nice bold sea taste. Again, you do you here and feel free to substitute things out or get creative.

At this point, you can mix it all together, or keep everything in its own little corner. This is the insta version so its all organized, but I’m definitely someone who mixes its all together to get a bite of everything with each bite. Are you a mixer? How do you roll?.

INGREDIENTS
* FOR BURGERS:
* 1 pd ground beef
* 1 cup minced mushrooms
* 2 tsp paprika
* 2 tsp onion powder
* 2 tsp garlic powder
* salt and pepper, to taste
* 6 slices cheese (if desired) I used Sharp Cheddar
* Toppings:
* Top with your favorite burger toppings.
* Pictured toppings:
* Butter lettuce, arugula, homemade mayonaise, pickled red onions, avocado, sharp cheddar cheese, harissa
* for dressed arugula:
* 3 cups arugula
* juice of ½ lemon
* salt and pepper, to taste

INSTRUCTIONS
1- Mix all patty ingredients in bowl. Form individual patties, then put on grill or cook in skillet for 5-8 minutes per side until desired doneness (I like mine medium)
2- For arugula, toss arugula with lemon juice, let sit for 2 minutes prior to serving.
3- Add additional toppings as wanted.
NOTES
This recipe is very simple and very customizable. Simply choose what you want on your burger and go for it! Some other great addition would be sautéed mushrooms, grilled onions, different cheese, ketchup, mayonnaise, pesto, etc. Be creative. .
