What you see: • Seared garlic ghee sea scallops: pat scallops dry with paper towels (this is very important); in a pan, heat 1 tablespoon garlic ghee, butter, or avocado oil; sear scallops for 3-4 minutes, or until slightly crispy and brown; flip and cook an additional two minutes. • EatBanza chickpea pasta shells tossed in creamy cashew butternut sage sauce. — Sauce Recipe: 3 cups roasted butternut squash (you can prepare this however you want but just ensure the squash is tender) 1/2 onion diced & 1 garlic clove, sautéed in 1 tsp. oil until tender 1 cup raw cashews 2 cups unsweetened cashew milk (or almond milk) 1/4 tsp. cayenne pepper 1/2 tsp. dried sage 1/4 tsp. salt + fresh pepper to taste Blend all ingredients until smooth) •Grilled asparagus with parmesan cheese . Bringing the cheeeese to your Wednesday ...this Low Carb Cheesy Chicken & Rice is #keto friendly with only 4 g net carbs....and it’s super filling so you won’t get hungry right away! - Ingredients: . 1/2 head cauliflower 2 tablespoons olive oil salt and pepper 1 crown broccoli (roughly 4 cups of bite-sized pieces) 1 cup shredded cheese (I used mozzarella) Chicken 1 lb boneless skinless chicken breasts (cut into bite-sized pieces) 1 tablespoon olive oil 1 teaspoon garlic powder 1 teaspoon onion powder 1/4 teaspoon salt 1/4 teaspoon pepper - Instructions: . - Make cauliflower rice: cut cauliflower into even-sized pieces. Pulse in a food processor 10-15 times or until it is broken down into uniform cauliflower rice. You can use a box grater if you'd prefer for this step! - Add 1 tablespoon olive oil to a non-stick pan and heat over medium heat. Add the cauliflower rice and cook for 5 or so minutes, until slightly softened. Season with salt and pepper. Divide between four 2 cup capacity storage containers. - Add another 1 tablespoon of olive oil to the pan. Add the broccoli and cook for 5-7 minutes, until slightly softened. Add the cooked broccoli to the storage containers with the cauliflower rice. - Chicken: Toss the chicken with olive oil, onion powder, garlic powder, salt and pepper. - Cook in the non-stick pan over medium heat until cooked through; 5-7 minutes. Add the cooked chicken to the storage containers with the cauliflower rice and broccoli. - Divide shredded cheese between the four storage containers. . BBQ Shrimp + Limey Avocado Salsa Meal Prep Bowls makes 4 servings Ingredients: 2 pounds large shrimp, deveined and peeled 2 cups cherry tomatoes, cut into quarters 1 large avocado, pitted and chopped 4 green onions, chopped 2 fresh limes, juiced 1 handful fresh cilantro leaves, chopped 1 Tbsp avocado oil, or extra virgin olive oil sea salt and freshly ground black pepper lime wedges, to garnish For serving: 2 cups cooked brown rice for the BBQ spice mix: 1 Tbsp. smoked paprika 1 tsp ground cumin 1/2 tsp cayenne powder 1/2 tsp garlic powder 1/4 tsp sea salt, or to taste Instructions: In a large glass mixing bowl place shrimp and BBQ seasoning ingredients and gently stir well to combine. Set aside for just a few minutes. In another bowl, add chopped tomatoes, avocado, onions, cilantro, lime juice, sea salt and pepper. Very gently toss to combine. Set aside. Heat oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes on each side or until they've turned pink and form a nice lightly charring in spots as pictured. So if you followed along with my story, I tried to make Mac n’ cheese but with a twist I used aged cheddar crackers from @granarolousa And it was SUPER EASY to make and so flavorful this was such a fun experience! I felt like I was in an episode on chopped with that mystery ingredient - MAC N’ CHEESE —> Ingredients: ✖️Whole Wheat macaroni ✖️1 package of @granarolousa aged cheddar cheese crackers ✖️1/4 cup almond milk (unswtened) ✖️1/4 tsp paprika ✖️1/8-1/4 tsp cayenne pepper ✖️1-2 tsp oregano ✖️Broccoli ✖️Tomato —> Directions: 1. Boil your pasta 2. Blend up the crackers,milk, and spices in a blender until you get a sauce texture 3. Boil the broccoli until soft and chop a tomato 4. Once the pasta is cooked, drain and place back into the pot 5. Crispy salmon, broccoli, and buttery garlic cauliflower rice Salmon is always my go to dinner of choice when I’m feeling fancy Aka when I want to spend the money to buy wild caught salmon haha It’s definitely a little pricey and I don’t always splurge for wild caught but when I do, I know it’s going to be a good evening - - Needed a little pick me up on this Friday so salmon was a pretty good choice Also made a new cookie recipe that I’m excited to share soon so I maybeeee had just a *few* of those (batter doesn’t count, right? ) Just a simple meal over here this evening to fuel a nice run ‍♀️ then yet another evening of wedding stuff Word of advice: if you’re doing all DIY stuff... don’t procrastinate I am SUCH a procrastinator (Eli’s the literal opposite) and I joked with my stepmom last week if he realized how much I still had on my to do list, he’d back out of the wedding We’ll see if he reads these long captions or not Off to get that run in and have a productive evening ‍♀️ Yayyy for the weekend - - #healthydinner details 1 piece of salmon sprinkled with garlic and chipotle seasoning cooked for 3 mins on each side in olive oil over medium heat (heat the skillet first) + broccoli broiled (500F) for 7-8 mins + cauliflower rice cooked in 1 tbsp of ghee + 1 tsp of garlic powder.
