I know this just looks like a (delicious) sandwich, but there’s a lot more to this melty Cuban than meets the eye. . One of the most life-altering parts of recovering from the concussion was damage that caused me to lose my sense of taste and smell. . Healing from this thing kind of dragged me to the ground in many ways, but I found the loss of taste to be uniquely heart-wrenching. You probably know by now, food is of paramount importance to me – as in, as I’m finishing my meals I’m usually already planning my next one. I’ve literally had several detailed dreams about Mac n’ cheese and also lasagna, specifically the corner piece. . What surprised me most about this loss, though, was my longing for the way scent triggers memory. My dad’s old car smells like an awful stale cherry air freshener because of the time we lost one under the seat and were never able to fish it out again, but every time I smell it, it reminds me of being a little girl and going to get hot chocolate with him on a Sunday from the little cart outside of our local grocery store. My significant other’s scent takes me right back to our first date in a train car converted into a restaurant more than 9 years ago. And at the risk of sounding super gross, my little dog’s paws seriously smell like Fritos. . For months, all of this was lost to me. As many as 25% of people experience this after brain injury, and my doctors gave no guarantee that it would ever come back. . I am so beyond blessed that it is coming back and it’s afforded me a unique opportunity. I try my best to not just “get through” any meal, no matter how mundane it might seem. And when it comes to something like enjoying these Cubans, I try to delight in the subtle sweetness of the bread, the sharp tang of acid, the salt and unctuousness of the meat – and oh my goodness, that CHEESE (say it with me, is there ANYTHING like cheese?) .
