Dirty Chai Almond Brownies (GF) - Its currently Passover, and I usually try to keep kosher for passover. That means no wheat, grains or legumes. A bakers nightmare. My family and I were in Vermont this past weekend and did a small seder in an RV kitchen, which was a sight to be seen It was lovely, we skied and hiked! I bought some chai infused honey while there, which inspired these brownies. I altered a GF Brownie recipe i found on @kingarthurflour , reducing the sugar almost by half since I probably was gonna eat most of these myself, adding some honey, chai spices, espresso and chopped unsweetened @callebautchocolate chocolate (regular chocolate usually has soy lecithin, which isn’t K for P - according to some). Altered Recipe below! - 5 tbsp butter, melted
- 2/3 cup sugar
- 6 tbsp honey
- 1/2 tsp salt
- 1 tsp vanilla
- 1 tsp ginger, 1/2 tsp cinnamon, 1/2 tsp cardamon, 1/4 tsp allspice, 1/4 tsp cloves
- 1/2 tsp instant espresso, dissolved in 2 tsp hot water
- 3/4 cup cocoa powder
- 3 large eggs
- 1 1/2 cups almond flour
- 1 teaspoon baking powder
- 4oz unsweetened chocolate, chopped
- Maldon salt for finishing
Preheat oven to 350. Mix butter, sugars, salt, vanilla, spices, espresso, cocoa and eggs in a bowl until smooth. Then mix in almond flour and baking powder. Add in chocolate till just mixed. Put into a parchment paper lined 8x8 pan. Bake for 35 min until set. Cool for 15.

My favorite Almond Butter Banana Muffins are going to be my go-to breakfast next week because they are gluten-free and kosher for Passover (perfect for Easter brunch too!) I also rounded up some of my other favorite desserts that happen to be #kosherforpassover on my office’s website link in bio
Recipe:
2 ripe bananas
1 egg
1/2 cup almond flour
1/2 cup almond butter
1/4 cup agave or honey
1 tbsp chia seeds
1/2 tspn baking powder
1/2 tspn vanilla extract
Dash of cinnamon
1/4 cup dark chocolate chips
Mash the banana and add in the almond butter, honey, egg and vanilla. Whisk until well combined. Pour in remainder of ingredients and mix well. Pour into a greased mini muffin tin and bake on 350 F for about 15-20 minutes, or until golden brown on top.

NUT-FREE MATZAH TOFFEE CRUNCH is an easy last minute dessert you can bring to your sedar TONIGHT!! No, it's not "healthy" or "lightened up," but THAT'S OK!!! Holidays are meant to be enjoyed and celebrated, so whether you celebrate Passover or Easter this weekend, I hope you indulge in some of your favorites!

My mom shared this recipe with me and I honestly don't know where it's from to give proper credit, but I put some of my own spins on it too - you can still catch my how-to in my stories!

Here's how to make it: l
1️⃣Preheat oven to 400F.
2️⃣Line a large baking sheet with parchment paper and matzo in a single layer (you may need to break up some matzo to make it fit). I used ~5-6 sheets of matzo.
3️⃣Melt 1 cup butter with 1 cup brown sugar in a saucepan over medium heat, constantly stirring. Once the butter is completely melted, bring it to a boil for 3 minutes, untouched.
4️⃣Pour the hot sugar (toffee) mixture over the matzo. Use a spatula to ensure it's spread evenly.
5️⃣Bake for 5 minutes at 400F until the toffee starts bubbling.
6️⃣Remove from the oven and sprinkle 1 1/2 cups chocolate chips on top. Let the chocolate chips melt. You can spread the chocolate over the toffee or just leave them dispersed throughout.
7️⃣Let cool. You can quicken cooling in the refrigerator or freezer. Once completely cooled, break into pieces and enjoy!
**Store in an air-tight container (I hear it's even better frozen!!)**
