Gozleme stands ALWAYS have the longest line at local farmers’ markets - because EVERYBODY LOVES THEM!!! . I like to make mine crispier and with more filling - because these are the two things I’d change if I manned the Gozleme stands . I make these for meals but my favourite is for summer BBQ’s - so good cooked on the BBQ. But mostly, I just love everyone’s reaction #RelishInPraise #SooooooImmature - N x . Gozleme (makes 4) . PASTRY: 2.5 cups flour (plain/all purpose), 1/3 cup, extra virgin olive oil, 3/4 cup water, 1 tsp salt Choose ONE FILLING (or make half of both): SPINACH & FETA: 300g / 10oz baby spinach 2 garlic cloves minced, 2 eggs, 1 tsp black pepper, 300g / 10 oz Danish feta (soft feta, other types fine too), 2 cups shredded mozzarella cheese (optional) SPICED LAMB OR BEEF: 1 tbsp olive oil, 2 garlic cloves minced, 1 onion finely chopped, 500g / 1 lb ground beef or lamb (mince), 1 capsicum / bell pepper diced, 120g / 4 oz baby spinach 1.5 tsp cumin powder, 1 tsp paprika, 1/2 tsp cayenne (adjust spiciness to taste), 3/4 tsp each salt and pepper, 1 tbsp water 120g / 4 oz Danish feta . 1. Put pastry ingredients in stand mixer and mix on medium speed for 3 minutes until smooth and pliable. 2. Spinach Feta: Place spinach, egg, garlic, pepper in bowl. Scrunch with hands to wilt, stir through feta. 3. Lamb or Beef: Heat oil on high in large skillet, cook onion and garlic 2 min, add beef and cook until no longer pink. Add capsicum, cook 1 min. Add spices and water, cook 1 min, stir through spinach to wilt. COOL. 4. Gozleme: Cut into 4, roll out into 35cm/14” x 20cm/8”. Put filling on half, fold over to cover, press to seal edges (use water if needed). 5. Heat 1.5tbsp oil in large skillet over medium high heat. Slide gozleme onto floured pizza paddle or similar, then slide into skillet. Cook 3 min until golden and crisp, flip, cook 3 min. I usually get 2 pans going. 6. Cut into 6 or 8 pieces, serve with lemon wedges (optional, I don’t). 7. Best served hot while crisp. Or keep warm on RACK in low oven. Leftovers - cool, reheat 180C/350F oven 7 min on tray, or pan fry. Dough keeps 3 days, do not assemble and keep to cook later. . . #recipetineats
