After my parents, I got the flu, too A very boring thing, you know, because it’s really hard for me to stay away from the kitchen. Only yesterday I tried to bake something, but anything complicated, my head still feels so heavy I made a crispy, creamy raspberry, peanut nuts, Dulcey chocolate and Ruby chocolate tart ♥️
On the bottom of the buttery pastry crust there’s a crunchy layer of Ruby chocolate-peanut butter-dried raspberries, then covered with Dulcey chocolate ganache. The tart is finished with three different namelaka cream: Waina white chocolate with vanilla, Ruby chocolate and Dulcey chocolate with peanut butter. And, ultimately, some tangy raspberries and tempered Raspberry Inspiration couverture decors give freshness and vivacity ✨

Strawberries are definitely the first and refreshing taste of spring and the most flavorful and juicy ones will be found right now, in April. They’re incredibly sweet and even if there are so many flavors that complement strawberries in a delicious way, what’s better than match them with dark chocolate and pistachios?
I’ve created this mousse cake for celebrating a birthday last week and I was pleased to hear that it was really enjoyed. I put all myself when I bake and the positive, happy views give me the strength to go on ♥️
The cake consist of a gluten-free pistachio biscuit sponge with a moist and tender texture, a Manjari 64% dark chocolate creamy namelaka, a wonderfully silky and light Strawberry Inspiration mousse, a Ivoire 35% white chocolate velvet coating and a fanciful decor with fresh strawberries and chocolate macarons with Strawberry Inspiration ganache

One of the things I love about cooking is the pleasure that food gives, both to myself and to others. That’s obvious and a very common thought, but there was a time in my life when I disliked food and I didn’t see the importance of taking time for family meals. The approach to pastry (and cooking in general) showed me the bright side of food and his magical power to generates emotions ♀️✨
I know for a fact that I made my boyfriend very happy with this chocolate and cherry birthday tart, inspired by flavors of the classic Black Forest cake, which he loves ♥️

A terrible thing happened to me this early morning. I’ve made a chocolate, hazelnut and raspberry tart over the last few days and I had to deliver it to a loving costumer just today. But I do for taking it from the fridge and, what shouldn’t have happened, happened. The tart falls from the plate disastrously.. I have no words to describe this, except that I just felt awkward and upset If this has ever happened to you too, you know what I mean.
Unfortunately, I didn’t have more sweets as a substitute for the broken tart, including these tartlets, inspired by the Tropical tart that I’ve posted Sunday. The ingredients are the same, I’ve only replaced the Waina white chocolate and coconut mousse with a Waina and coconut namelaka, that’s awesomely smooth and very hard to resist! That’s also why they’re finished in no time

I’m spending these warm, beautiful spring days indoors, because the cold, the headache and the cough have no intention of leaving me the most ironic thing of all is that, when I feel better, the cold and wet weather will come back! Anyway, I hope that’s not true and instead, these crispy melt-in-your-mouth coffee, hazelnut, milk chocolate and vanilla little fingers magically heal me ☕️✨
Friable hazelnut sablé, spongy coffee financier, crunchy hazelnut praline paste, mascarpone and vanilla light mousse, Almond Inspiration mirror glaze, creamy Azélia milk chocolate namelaka and Dulcey decors are the ingredients.. that I hope to share the whole recipe (Italian/English) with you on my blog soon ♥️♥️ (I’m awaiting confirmations to put the English version online definitively!)
