PEANUT BUTTER COOKIE DOUGH BARS, dairy-free, gluten-free, vegan and only 6 ingredients! Great recipe & by @nadiashealthykitchen Makes – 8 bars! Ingredients: 1 cup (110g) oat flour – plain rolled oats blended into a flour in the food processor. Use gluten-free oats if necessary, 1/2 cup (125g) peanut butter (or tahini for nut free), 3 tbsp maple syrup, 2 tbsp coconut oil, 1/4 tsp salt, 1 tsp vanilla, 1/4 cup dairy-free chocolate chips. Chocolate topping: 150g dark chocolate – I used 74% dairy-free dark chocolate, 2 tbsp peanut butter (or tahini), 1 tbsp coconut oil. Method: Mix the oat flour and salt in a bowl, then add in the peanut butter, coconut oil, maple syrup and vanilla. Mix to combine then fold in the chocolate chips. Press the mixture into a loaf tin lined with parchment paper. I used a 22×12 cm loaf tin. Refrigerate for 1 hour. Melt the topping ingredients over a bain marie (double boiler), then pour on top and leave to cool for a few minutes before returning to the fridge for another hour or until the chocolate sets. friday morning SPICY TURMERIC AND ORANGE OATS + my very own handmade wooden spoon from @richardjamesguitars (who is a very fine luthier check out all his spoons etc pls)✌ 1/2 cup oats, 1 orange (peeled and chopped), 1/2 tsp turmeric, 1/4 tsp chilli flakes, salt + black pepper and 1 cup soy milk ~ cooked over a medium heat until creamy and topped with @alpro soy yoghurt, homemade roasted peanut butter, blackcurrent jam + granola
