“Do I have to teach you everything?” my pizza-loving friend the Gutter Gourmet recently asked me after telling me to meet him at Phil’s Pizza on Varick Street downtown.
Depending on whether you believe the awning or the photos inside, Phil’s opened in 1970 or ‘72. According to @nypizzaproject it’s run by a husband-and-wife team, Rose and Tony. I didn’t get a chance to ask who Phil is.
Like me, you may have passed this place dozens of times. It’s on what has been a bit of a rough stretch next to a check-cashing spot. When I arrive, a gentleman is on his phone swearing & threatening someone. But there’s a Shake Shack across the street now... the area is changing.
Anyway, I haven’t seen a ton written about it. Part of the reason I’ve never been is it’s closed weekends and is only open 10am-6pm. It’s a lunch spot relying on the nearby offices. If you need a new passport this is your slice. It made a list of the city’s pizzerias with the most character (Tony has a great twirled white mustache) and Slice Harvester gave it a glowing review on his Manhattan-wide quest.
Gutter learned about Phil’s (I love the Medieval lettering) via @chefsymon, who touts its grandma, but we order the Sicilian, which is what he’s had.
This, frankly, is actually most like the grandma pies I grew up with on Long Island, where they were invented. It was great. A chewy-crisp edge, softish bottom. Imagine a grandma that ate like a thicker classic New York slice and you get the idea.
When I tell Tony this he says he didn’t want us to wait for our fresh pie, otherwise he would’ve proofed it longer, and shows us a taller pie.
I’d go back for a slice of that, the grandma, and the plain, but it’d be hard to turn down another of these. And hey, for the record... never said I knew everything . — #pizzacowboy#nycbestpizza #bestpizzanyc

I said on my last post about this place, I’ve been before and had lovely service, but seems I went on a bad night and although the food was nice (pork belly and pizza in particular), and drinks were flowing, we barely had someone attend to our table! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Saturday nights are notoriously busy in London, so I’m hoping to go back, order another one of these bad boys with crust fluffy enough to douse in olive oil ☝

The tomato pie @slicehousewalnutcreek is delightfully crunchy, with exactly enough tomato and cheese. Course semolina keeps it extra crunchy on the bottom. I also very much appreciate that they cut these pies into six slices when being sold by the slice. Good thing I’m already planning on coming back tomorrow for more! By the way I should mention that “tomato pie” is a piece of terminology left over from the early 20th century, when Pizza was often described in newspaper articles as “an Italian tomato pie.” There is no real difference between pizza and tomato pie. They are one and the same. Here I speak mainly of the tomato pie referenced at the old pizzerias of Trenton, NJ but the bakery style pizza in large rectangular sheet pans topped with only tomato and served at room temperature (in Philadelphia and Central New York) is a pizza subset, closer to various for catcher from southern Italy and Sicily. #pizzabytheslice #westcoastpizza #tomatopie
