I made Peony Jelly! It’s like other flower jelly in that you boil the petals in water, steep overnight, drain & discard the petals, & cook the liquid with lemon juice, sugar, pectin. Oh, and remove all ants before beginning! You can pick the peonies right before they turn brown. So it’s a good way to make use of flowers that don’t seem to last very long. If you have pink peonies, you’ll end up with a lovely pink jelly. I have white peonies, so it looked like someone peed in my jars. For one jar, I added a drop of red food coloring. .
I used Pomona’s Pectin. This is a special pectin that comes with a calcium powder & pectin. It allows you to use much less sugar than regular pectin (like 3/4 c sugar versus 2-3 c). I’m not that experienced with this pectin. I made jam with it a few times & it has a more firm consistency. Someone recommended that I slightly undercook it to avoid the firm texture. I used 3/4 cup of sugar in total, so my jelly is not overly sweet. That’s good because I don’t like super sweet stuff. .
So what does it taste like? I read that peony jelly tasted like a mix of strawberry & peach jelly. @woodsygolightly made a beautiful pink batch & said hers tasted like watermelon. I found mine to taste pretty much like how peonies smell with a touch of lemon, ha! Perhaps if I had used more sugar it would’ve masked the strong floral taste. If I make this again, I will add more sugar or try a white grape juice concentrate for the sweetener.

Tomato season can't get finished soon enough (even though it hasn't even started here yet)... I think I might have to harvest the first tomatoes green just so I can make a batch of pickled green tomatoes. I don't think I can wait until the end of tomato season.

Schon sehr lange bereitet es mir eine riesen Freude, Lebensmittel zu verarbeiten & haltbar zu machen. Ich schätze das liegt mir einfach in den Genen, meine Omas sind/waren beide Einkoch-Königinnen. ☺️

Aber seitdem ich containere macht das ganze doppelt so viel Spaß, weil ich das Leben der Lebensmittel, die eigentlich längst das zeitliche gesegnet hätte, um ein vielfaches verlängere.

Einmachen hat für mich irgendwie etwas sehr meditatives an sich, genau wie kochen auch. Man ist einfach ganz im Moment und konzentriert sich voll und ganz darauf, etwas zu zaubern, das Gaumen & Körper gut tut.
.
Meistens entfaltet sich durch das Verarbeiten auch nochmal eine ganz neue Geschmacksnote und man bringt das Aroma der Früchte oder des Gemüses erst richtig zur Geltung. .
.
Außerdem bekommt man eine sehr gute Vorstellung von der Wertschöpfungskette vieler Lebensmittel. Wieviel Zeit, Wasser, Energie, Arbeitskraft & Präzision es erfordert, Lebensmittel am Leben zu erhalten. .
.
Die letzten Tage war ich ziemlich produktiv. Auf dem Foto seht ihr eine kleine Auswahl: .

#Blanching #Garden #Greens for #freezing. Had to emergency-harvest my #dinokale, #herbs and #cabbages this week ahead of our first hard frost. With fridge space at a premium I decided to freeze most of the crop because I've had limited kitchen access this week and haven't been able to cook it. I made a big batch of #sauerkraut with the #cabbages (that's still fermenting and this whole huge sink full of #kale yielded just six little ziplocks of blanched greens, which will be frozen for use all winter. I also froze most of my #sage and #basil, though I'm thinking of stating a new indoor #herbgarden over the winter. I did save my catnip plant because it's still in great shape and hasn't gotten hard and woody like the others.
