Foraging for Truffles / Tartufi in Italy. OK I confess, I foraged this in a specialist shop in Pisa City Centre This is the Summer Truffle / Tuber aestivum, and was harvested in Umbria with the help of truffle hounds. At 9 euros I was suspicious of its authenticity - I always expected it to be higher priced than this. But the highly prized garlicky Piedmont White Truffle / Tuber magnatum is the one which apparently attracts the silly prices (although I read that this is as much to do with a genius marketing campaign in the 1940s as it is with superior taste, when they were shipped to the most famous politicians, actors and athletes of the time as gifts, which resulted in very fast commercial success with hundreds of thousands of boxes of them being shipped worldwide by the 1950s). The one I have here is the least prized but still apparently delicious. Having grilled the shop assistant on its authenticity I chose my truffle based on which one had the strongest scent, as recommended by a friend with a good bit of experience. This one knocked the spots off the one other truffle, which hardly smelled at all. Having never found or bought truffles before (I live in Scotland where the ground is too acidic), I wasn't sure what the smell would be like but it reminded me instantly of my favourite seaweed Pepper Dulse, otherwise known as Truffle of the Sea. Tartufini al tiramisù, un boccone di pura goduria. E il mascarpone? Sempre e solo quello di @consorzio_virgilio. Trito 90 gr. di biscotti secchi in un mixer o con un mattarello e metto da parte. In una ciotola mischio 250 gr. di mascarpone con 40/50 gr. di zucchero a velo. Aggiungo il caffè poco alla volta (ne calcolo circa 30/40 gr. in totale, ma lo aggiungo poco alla volta perché potrebbe non servire tutto) e i biscotti tritati e impasto bene. Devo ottenere un composto morbido ma compatto. Metto in frigo per circa 20 minuti.
Trascorso questo tempo prendo un pò di impasto e faccio delle palline che passo poi nel cacao amaro in polvere. Metto in frigo per almeno 1 ora. Ne vengono circa 18 da 2,5 cm. di diametro. Si conservano in frigo fino al momento di servirli e sono pazzeschi!
