To my instafam who wanted my Nutella bread and butter pudding recipe, here it is to end 2018 on a sweet note! This is a good one to make for a last minute New Year’s Eve dessert or on New Year’s day for one final calorie fest before the health kick starts It’s super easy and sooo more-ish, there are honestly no words to describe how amazing this dish is. You will need:
420g brioche bread (plain white bread will work too)
200g Nutella
500ml whole milk
200g caster sugar
3 medium eggs
1 tspn vanilla extract
1/4 tspn salt
Single cream to drizzle

Slice the bread in half and slather with Nutella. Close over to make sandwiches, cut in half again and arrange neatly in a greased baking dish. Whisk all other ingredients together in a jug and pour entire mixture over the bread and Nutella. Allow to sit for 15 minutes before baking in the oven at 175° for 40 minutes until the milk and egg mixture is set. Check the bread after 20-30 minutes. If it looks like it’s burning, cover with foil for the remainder of the time. Serve hot with single cream. °

Cheesy Pasta Recipe
.
Ingredients
• 4 yukon gold potatoes quartered
• 3 large carrots cut in thirds
• 3/4 cup unsweetened plant milk (I used soy)
• 1/3 cup nutritional yeast
• 2 Tbsp fresh lemon juice
• 1 tsp apple cider vinegar
• 1 1/2 tsp salt
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp turmeric
• 1 tsp ground nutmeg
• 1 lb of your favorite pasta cooked al dente

Method
• add potatoes and carrots to a large pot of water and cook until fork tender
• transfer cooked veggies to a blender and add in the rest of the ingredients except for the pasta
• blend until combined
• start adding sauce to the cooked pasta until noodles are coated
• sprinkle on a few crushed red pepper flakes
• enjoy

I’ve had so much love for my meatza recipe in my highlights and was asked to do a video on it for you all to see, so here it is! Low carb/keto, gluten free and slimming world friendly, it’s the perfect protein-packed and filling meal to serve up any night of the week to satisfy those pizza cravings. The best part is it’s so easy and quick, and much better for you than ordering a stodgy takeaway pizza. Try it out this weekend if you fancy making something different to eat! I’ve had nothing but rave reviews on this one, it’s a win every time. For my slimming world followers, make it completely syn free by using lean mince, free toppings and using cheese from your healthy extra allowance. Makes 4 generous slices
1kg chicken mince
3/4 teaspoon salt and pepper
1 tspn onion powder
1 tspn garlic powder
1/2 tspn chilli powder (optional)
1 egg
1 tspn dried oregano
Cheese, tomato purée/pizza sauce and toppings of your choice
1. Mix all the ingredients thoroughly together (except the cheese, tomato purée/pizza sauce and toppings) and lay out on to a greased/lined baking tray.
2. Gently flatten and shape the mixture in to a pizza base shape (I usually make it rectangular), and make it around 1/4 inches thick.
3. Bake at 180° for 10-12 mins or until the base is just barely cooked through.
4. Remove from oven, drain away any juices that have collected and top with tomato purée/sauce, some more oregano, cheese and toppings of your choice.
5. Bake again for 10 mins or until the cheese is melted and golden.
6. Serve with salad and/or potato wedges. °

Low carb tuna melts - who would have guessed? I adore tuna melts and I really missed them when I lived the keto lifestyle once upon a time. So I experimented and came up with this amazing little invention, with all of the taste and flavour of a traditional tuna melt but with none of the carbs! It really got me through some tough cravings and helped to keep me right on track You’ve got to try it to believe it I still make this from time to time even though I’m no longer on a low carb diet, just because it’s so tasty and leaves me feeling full without the bloat. 1 beef tomato, sliced in to 1/2 inch rounds
Small can of tuna, drained
1/2 small red onion, finely chopped
Mayonnaise, to taste
3-4 tbspn shredded cheese of choice
1. Make up the tuna mixture by mixing the tuna, mayonnaise, chilli flakes and onions together till fully combined.
2. Slice up the beef tomato in to 1/2 inch thick rounds and arrange on a lined baking tray.
3. Top each tomato slice with some tuna and shredded cheese.
4. Place under a medium grill for 5 mins or until cheese is melted and bubbly. Serve with green salad. °
