This Coalport plate was made around 1840 and while at first sight it seems to have less decoration, if you look carefully it actually has so much detail. The rim is a simple feather-moulded rim as they were very popular around that time, but the gilt decoration on the soft salmon rim is incredibly beautiful. And the flowers in the centre of the plate were painted with great skill. And what is the colour - do you call this peach or salmon? And, I wonder, is this the kind of colour that we all see slightly differently, causing endless arguments about what to call it? Whatever it is, it is beautiful exactly because you can't quite pin it down .⁠ .⁠ .⁠ ⁠ ⁠

Apples are almost always a good idea! Did you know that Britain once produced the most varieties of apples because of the Victorian gardeners? Although typically eaten during the winter and spring (cherries were popular in the summer), today we can have them whenever we so desire (something I definitely take for granted). Many gardens contained apple trees, where the fruit would be harvested and used in many different dishes and even pickled! The competition between apple gardeners was quite intense during the 1800s. Many different varieties were produced, including the popular “Lady Sudeley” which was common in the late Victorian era! How’s that for a little apple history! A fruit we so often take for granted. A jasmine sponge cake almost forces you to be in a swell mood! When the sun is ablaze and doesn’t show even the slightest sign of cooling down, I can’t help but ponder how the Victorian bakers managed to deal with the sweltering heat caused by both the outside sun and cast iron stove. I imagine the kitchens were incredibly stuffy, humid, and rather miserable, and while I often romanticize the Victorian kitchen, there was no denying that much of it was tough, hot, and sometimes miserable work. At our local Victorian mansion The Culbertson, the kitchen is located in the basement which was a rather swell move on the builders part, putting it in perhaps the coolest part of the building. Besides the heat, I had such a lovely day creating Mrs. L. A. Bradish’s sponge cake, found in “How We Cook In Los Angeles”, a cookbook published in 1894. I do hope Mrs. Bradish doesn’t mind that I used jasmine tea in place of water, for it made for a lovely concoction and delicacy for the taste buds. Using some of the finest jasmine tea I’ve ever tasted, courtesy of @malabartradingcompany, I couldn’t help but fall in love with this flavor combination. Quite truly some of the best tea I’ve had in such a long time, and I’m quite picky! Such a unique flavor, truly exquisite. It would make for a marvelous addition to a lovely summer picnic in a meadow somewhere! And I’ll end on the opening quote of this cookbook, stating “A practical cook-book containing six hundred or more recipes selected and tested by over two hundred well known hostesses.” And I must agree with those hostesses, these recipes are divine! Vanilla earl grey layer cake with buttercream icing! Because my love for earl grey is growing bigger all the time, I thought it would be quite an interesting experiment to add the steeped tea into the batter, and I would say it was absolutely a hit! The bergamot flavor comes through without being overpowering, and with the icing it’s absolutely heavenly! I’m not sure what it is about earl, but the bergamot oil paired with the black tea makes my mouth water. I obtained the most lovely earl grey from a tea parlor a few years back. The parlor went out of business and I’ve been so terribly sad about it. It truly was one of the best teas I’ve tried, it’s a shame it didn’t work out. I’m always so terribly saddened when businesses I love close. To create this cake, I used a recipe for a layer cake found in “The Royal Baking Powder Company Cookbook”, which was published in 1886. Upon tasting, it is much denser and drier than the cakes we are used to today. Besides that, it’s absolutely delicious and oh how lovely this would be at a tea party! I can just imagine this cake in the middle of a table, surrounded by beautiful bone china and hot tea. Something that I find quite lovely about layer cakes is that they typically are baked for company! They are a social cake! Which pairs nice with tea, of course. I just find it so lovely when food can bring people together! That’s part of the reason I love baking so much! Not only is it relaxing and delicious, but the wonderful aromas and sweet smells brings people together. I love baking and eating these creations with my family!
