My ultimate cure to a gloomy day: Arroz Caldo (our version of congee/jook) with kasubha (safflower), crunchy garlic bits, scallions and most importantly --soft boiled eggs (I hate overcooked, grayish eggs with a passion). Had some leftover rotisserie chicken plus the weather begged for it too. Just so comforting!

This week’s #lunchspecial is ARROZ CALDO! “Arroz Caldo” translates from Spanish to “Rice Soup”. Despite the Spanish name, this dish is the Filipino-specific version of Asian congee and is jam-packed with gingery-garlic flavor. Rice is toasted with ginger and garlic and is cooked in chicken broth and then finished with fish sauce and calamansi vinegar to bring a little tang to the soup. We garnish it with duck cracklings for crunch and a 6-minute egg brings a rich balance. It’s the perfect winter warm up! INGREDIENTS:
1/2 Kilo Beef Shank, cooked in Pressure Cooker for about 45 mins.Cut into servings and set aside for toppings.
6 to 7 cups Beef Broth, strained
1 Beef Bouillon Cube ( or you can use Patis)
1 Cup uncooked Glutinous Rice and Jasmine Rice, mixed and washed
2 Tbsp Cooking Oil (i used sunflower oil)
1 Thumb size Ginger, julienne sliced
1 Medium size Onion, chopped
1 Head Garlic, half for sauté and half for fried toppings
2 Stalks of Lemongrass, slice off the very bottom of the stalks and peeled off any dried-layers and bash the woody top end with a rolling pin to soften, and help release some aromatic oils.
Boiled Eggs and Spring Onions for toppings
Salt and freshly ground Black Pepper to taste
PROCEDURE:
Heat the oil in a large pot in a medium high heat. Saute the garlic, onion and ginger until slightly brown.
Add the rice and stir. Pour the beef broth and bring to a boil. Add the Bouillon Cube and the Lemon grass.Reduce heat to a low. Stir occasionally and simmer until the rice is cooked, depends on the desired thickness of the soup.Add salt and pepper to taste.
Serve hot with toppings!
