So like I promised, this is the Special Fried Rice recipe video tutorial and it’s the very first of many video tutorials coming on the @zeeliciousquickfix page. I can’t wait to share all the yummy recipes I have been working on.. In the meantime, enjoy this video and make sure you make this dish for your family and friends this weekend. The dark soy sauce, light soy sauce and oyster sauce I used are Asian sauces. I usually get mine from either Shoprite or Spar in Lagos but I am sure you can get it from smaller supermarkets around you and each sauce costs less than N600. I’d strongly advice that you use basmati rice because it makes all the difference with this recipe but if you don’t have that, you can use any other type of rice accessible to you. If you are using basmati rice, ensure you use the 1:1 1/2 rice water ratio. That is for every cup of rice, cook with 1 1/2 cups of water. Follow these steps to get the best cooked basmati rice. 1. Wash the rice thoroughly. 2. Bring the water to a rolling boil and add about 2 table spoons of lemon juice and a sprinkle of salt. 3. Transfer the rice to boiling water and reduce the heat to the lowest. 4. Cover pot with foil paper before placing the lid. This will help trap the steam in the pot and cook rice faster. 5. Leave rice to cook till tender. Remember that basmati rice cooks very fast so be sure to keep an eye on it and ensure your heat is set to the lowest when cooking it.
