Fact: Sticky-spiced cashews make everything extra! This was dinner last night, a fridge clean-out situation, but I made my sticky-spiced cashews for topping and suddenly the meal was Here’s how to do it:
1. Place a couple handfuls of raw (non-roasted / unsalted) cashews in a dry skillet over medium heat. Toss often until they are getting a little golden.
2. Tip the pan so that all the cashews are on one side, then drizzle in about 1 tablespoon of tamari, 1 tablespoon of maple syrup over top, and toss well to coat.
3. Lastly, sprinkle in some smoked paprika or chipotle, a touch of ground cumin, and coriander. Toss well. Taste and adjust seasoning to suit you. Enjoy immediately, and store any leftovers in the fridge for up to three weeks. Yum!
The rest of this bowl was black beans, toasted pumpkin seeds, a ton of greens and herbs from the garden, tomatoes, avocado, and spring onion. .

I value cooking, but definitely realize that it’s not everyone’s cup of tea. I try to be conscious of this especially when it comes to recipes. I never want meals to seem impossible, so I do my best to keep things as basic as possible. For example, my dinner tonight was mostly steamed and reheated outside of the plantains I decided to bake in the oven. But the beans were from a batch I cooked two weeks ago and froze for later use. The broccoli, carrots and kale were steamed lightly and tossed together with garlic powder, ginger powder and a little soy sauce. Everything came together and I topped it with avocado, red pepper flakes and sesame seeds. Nothing super special, no crazy ingredients, just basic food that tastes amazing on its own.
Can I just have this plate every night? So delicious. Black Beans with chorizo, brown rice, broccoli and avocado. The only thing I wish I could have with this is plantains, but no good plantains by me at the moment.

Black Beans and Chorizo Seitan
1 can black beans (or 1 1/2 cups cooked black beans)
1 package of @uptonsnaturals chorizo seitan or vegan chorizo sausage
1 can diced tomatoes
1/2 red onion, diced
3 cloves garlic, minced
2 tsp Garlic chili sauce
1 tbsp soy sauce
2 tsp smoked paprika
2 tsp cumin
1 bell pepper, diced
1 tbsp maple syrup
1 cup water
Juice of 1/2 a lime + lime zest
Fresh cilantro (optional)
Salt and pepper to taste

In a pan, add onion and sauté until softened. Add garlic, seitan and black beans. Sauté until fragrant then add chili sauce, soy sauce, smoked paprika, cumin, diced tomatoes and bell pepper. Sauté for about 3-4 minutes then add in water and maple syrup. Bring to a simmer and cook for 25-30 minutes. Turn heat off and add lime juice and zest, cilantro and salt/pepper.
BLACK BEAN PASTA yes that pasta is made 100% from black beans I really really like the texture! Also they’re such a cool way to add some protein into your meals
This bowl was yesterday’s dinner (also today’s lunch but didn’t look as pretty in my lunch box) and it had roasted sweet potatoes, lettuce, red bell pepper, oat tofu and avocado oh and I also added some vegan bolognese on top

I stopped buying canned beans last year and now make a giant toaster oven of black beans and then pinto beans every couple of months, and freeze in family-size portions. Saves a ton of money and a ton of aluminum cans. •

Quinoa black bean burgers by @feelgoodfoodie
Ingredients:
1/4 cup uncooked quinoa
2/3 cup water
1 15 oz can black beans rinsed and drained
3 oz tomato paste
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup breadcrumbs
1 tablespoon olive oil
Burger buns and toppings of choice
Steps:
In a small pot, cook the quinoa with water and add salt to taste. Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork.
In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties.
Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side.
Build a burger with your favorite buns and toppings.
