Sockeye Salmon Coconut Curry⠀ ::⠀ ::⠀ The key to poaching salmon is slow and low — you don’t want to boil the fish. Ideally the fish cooks at a bare simmer, allowing the salmon to stay whole and tender. ⠀ ::⠀ The poaching liquid that you create gently flavors the fish as it cooks, creating a satisfying, healthy dish with minimal effort that looks beautiful and tastes delicious!⠀ ::⠀ Don’t overcook the salmon — the portions may be done after about 4 minutes.⠀ ::⠀ ::⠀ Sockeye Salmon Coconut Curry⠀ ::⠀ ::⠀ Serves 2-4⠀ ::⠀ Prep time: 15 minutes ⠀ ::⠀ 1 tablespoon organic extra virgin olive oil or organic macadamia nut oil⠀ 1 large shallot, minced (you can substitute ½ white or yellow onion)⠀ 2 teaspoons fresh ginger, grated⠀ 2 cloves garlic, minced⠀ 2-3 tablespoons Thai green curry paste⠀ 1 can unsweetened coconut milk⠀ 1 tablespoon brown sugar (optional)⠀ 1 cup chicken broth, vegetable broth or water⠀ 2 heads baby bok choy, trimmed ⠀ 2 fresh tomatoes, chopped⠀ 2-4 portions skinless-boneless Vital Choice Wild Alaskan Sockeye Salmon, thawed⠀ Salt and pepper to taste⠀ Black rice or brown jasmine rice for serving, if desired⠀ Fresh cilantro leaves for garnish⠀ ::⠀ ::⠀ Directions:⠀ ::⠀ 1. Heat the oil over medium heat in a saucepan that’s large enough to accommodate 2-4 salmon portions in a single layer.⠀ ::⠀ 2. Once the oil is warm, sauté the shallot or onion, grated ginger and garlic until the onion begins to soften, stirring often, about 5 minutes.⠀ ::⠀ 2. Add the curry paste and cook 1 minute or until fragrant. Add the coconut milk, brown sugar (optional) and broth and bring to a boil. Reduce heat to a simmer and add the bok choy and tomato. Cover and simmer until bok choy is tender, about 2 minutes.⠀ ::⠀ 3. Season the salmon portions with salt and pepper and gently add them to the broth until they’re fully submerged. Cover and gently simmer until salmon is just cooked through, 4-5 minutes, depending on your preference.⠀ ::⠀ 4. It has been recommended by some plant-based medical professionals to take a supplement to ensure you’re getting enough. The following is from an article in @nutrition_facts_org I found quite interesting. “According to two of the most credible nutrition authorities, the World Health Organization and the European Food Safety Authority, we should get at least a half a percent of our calories from the short-chain omega-3 ALA. That’s easy: My Daily Dozen recommendation for one tablespoon of ground flaxseeds takes care of that. Our body can then take that short-chain omega-3 and elongate it into the long-chain omega-3s EPA and DHA found in fish fat. Why not supplement with omega-3 fish oil or just eat fish, though? Fish oil pills have grown into a multibillion-dollar industry, thanks in part to the American Heart Association’s recommendation that individuals at high risk for heart disease should ask their physicians about omega-3 fish oil supplementation.
