Sorry for being such a Calvados aficionado recently! One more oldie but goodie from Thad Vogler. Lonsdale 2 ounces Calvados Hors d’Age 2 ounces Biodynamic Apple Juice 1/4 ounce honey 3 leaves of fresh basil 3/4 ounce lemon juice Garnish: basil leaves and apple slices For this particular drink, I tried Michel Huard Hors d'Age, which is a blend of brandies from 1990 - 1992, ranging from 16-25 years. At the price of 60 dollars, I thought it is an incredible value compared to other calvados. Being under Charles Neal's portfolio gives me another nod to purchase. Big on the apple notes with some oakiness to finish. So far, I have tried calvados from all three crus: AOC Calvados, Pays d'Auge Calvados and Domfrontais including brands such as Christian Drouin, Lemorton and Michel Huard. I am ready to purchase some of the more aged ones as well as trying Camut. I have always thought of it as “apple cognac” which probably isn’t the best explanation, but it’s not the worst either. From what I understand, Calvados is similar to Cognac/Armagnac, but distilled from cider instead of wine. TREAT YOURSELF (a tribute to @a_ole) - 45ml/1,5oz Chateau Du Breuil Calvados, 8yo, Sauternes Cask Finish - 30ml/1oz @Von_Have Sloe Gin - 15ml½oz Amaro CioCiaro - 2 dashes Chocolate Bitters Stir all with plenty of ice / Strain into a vintage coupe / Express and Garnish with lemon peel (and little bit of mint) / Serve with a piece of homemade pastry! Let's continue with the tribute drinks, created for the five people that won my little Insta Story-game recently! The first person to send in a (correct) answer was Anthony! Now I'm gonna be honest, him guessing an ingredient was our first ever 'communication' so I had to think a bit harder in order to create a tribute for him. Though, after browsing through his photos a bit he looks like a great, down-to-earth guy, who is living the 'bon vivant' life of good food and drinks. Hence the reason I created a cocktail based on one of my mama's pastries for him. . Apple mixed berries and chocolate were the main ingredients for the pastry so I went for a stirred drink based on three leading roles 8 year old Calvados by Chateau du Breuil, finished on Sauternes Casks (think Honey-glazed baked apples, assorted nuts and crème brulee) a bittersweet, semidry Sloe Gin (created in Hamburg by Von Have by blending gin and Sloe juice) and Amaro CioCiaro, with its Cola, Orange and Lemon peel profile. Finished with some chocolate bitters, this was a true delight!
