Pasta in all forms please . Turned my moms lasagna into a stuffed shell recipe with some spinach. Simple enough recipe below
Stuffed Shells - Turkey Spicy Italian Sausage
- Spinach - Green Pepper (Diced)
- Onion (diced)
- 4 cloves Garlic (minced) - Red Pasta Sauce - Italian Cheese Blend
- Cream Cheese - Oregano
- Bay Leaf - Jumbo Pasta Shells - Olive oil.
Preheat oven to 350 degrees. Cook and drain pasta according to package directions, drain, oil and set aside covered with plastic wrap. Heat a skillet over medium high heat and then add olive oil. Remove casing from sausage, sear, and crumble meet using spatula or potato masher. Add a little salt and pepper and your diced veggies, and then garlic. Pour in 2/3 of the sauce, oregano, bay leaf and simmer. After about 10 min add your spinach and wilt into pasta. Remove Bay Leaf. Add 4 oz of cream cheese and a handful of the Italian blend. While the cheese is melting, fill the bottom of a pan with your reserved sauce. Arrange and fill your Shells in the pan. Sprinkle more cheese, cover and bake at 350 for 30 min. Remove cover and top with oregano and bake an additional 5 min. Serve with Brussels or Green Beans.

Nick and I are beyond excited to take a long weekend (Friday-Sunday) trip to New York! He has never been, so this is his belated bday trip/a fun getaway for us. The game plan is to explore the whole city on foot (praying for good weather), and eat some good food of course. .
