The special processed red catuai from Finca San Rafael is by far the most surprising Honduran coffee I have met. Under their experimental 90-hour fermentation process, the raw beans not only look like yellow topaz but also give a pleasant fragrance like white wine mixing with balsamic vinegar. . Roasting is the tricky part. It requires higher heat input than other coffees and has noticeably higher FC temp (by almost 10 degrees C) due to its hardness, but once the FC starts, it develops in no time (I rarely came across a coffee that starts to ooze oil at 13% DTR). But if dropped at the right time, the wineyness in the cup is unbeatable.
