Qué felíz me puso hacer mis primeros croissants. Siempre es mi hija Agus la que los hace en casa(cuando viene)... pero quise hacerlos y me encantó!... ver la transformación de la masa es impresionante! No son rápidos. Mientras los hacés, en los tiempos de espera podés hacer mil cosas! No te pongas a hacerlos para comerlos dentro de un rato, ni de dos ratos... Son taaaan ricos! Los croissants se hacen con un "laminado de levadura" Se prepara una masa simple con levadura, y por otro lado el "empaste" que es la manteca, que se envuelve en esa masa, como un paquetito...y con los consiguientes dobleces y amasados se va integrando esa manteca. Y forma esas mil capitas deliciosas! ❤ .PLATOS DE @alfar_ushuaia ❤ . .RECETA: PREPARAR UN BOLLO CON 600 GS DE HARINA 0000, 25 DE AZÚCAR, 15 DE SAL, 7 GS DE LEVADURA, Y 280 CC DE LECHE. AMASAR POCO. DEJAR TAPADO CON FILM EN UN LUGAR NO MUY CALIENTE. SU FERMENTACIÓN DEBE SER LENTA 3 HS APROX. POR OTRO LADO MEZCLÁS 200 GS DE MANTECA CON 20 DE HARINA. FORMAS UN RECTÁNGULO DE MANTECA COMO SE VE EN LA FOTO. LLEVAR A HELADERA ÉSTE "EMPASTE" UNA VEZ LEVADO EL BOLLO DESGASIFICAR Y ESTIRAR COMO UN RECTÁNGULO, COLOCAR EL EMPASTE DE MANTECA EN UNA MITAD(COMO EN LA FOTO. DOBLAR LA MASA A LA MITAD SOBRE EL EMPASTE, ENVOLVIÉNDOLO. ESTIRAR CON PALOTE. GIRAR UN CUARTO LA MASA Y DOBLAR DESDE LOS DOS EXTREMOS HACIA EL CENTRO SUPERPONIENDO...QUE QUEDEN 3 CAPAS (COMO EN LA FOTO). ÉSTE DOBLÉZ EN TRES LO HARÁS ÉSTA Y2 VECES MÁS, ENTRE CADA VEZ LLEVAR LA MASA A HELADERA POR UNA O 2 HS, TAPADA CON BOLSA O FILM. LA ULTIMA VEZ ESTIRÁS EN UNA TIRA LARGA Y DE 4 O 5 MM ESPESOR. CORTÁS TODOS LOS BORDECITOS. CORTÁS TRIÁNGULOS. ENROLLÁS FORMANDO LOS CROISSANTS. DEJÁS LEVAR. PINTAR CON HUEVO.
