EGGS IN GREEN CURRY

Ingredients
⬇
1 spring curry leaves
2 tablespoons #ghee
2 bay leaves
1 inch #cinnamon stick
6 pepper corns
3 #cardamom pods
1 green chili, cut into 3 segments
2 #onions, chopped
1 tsp salt
1 tsp #cumin powder
1 tsp coriander powder
1/2 tsp turmeric
5 boiled eggs
1/4 cup #curd
1 tomato chopped
For the Spice Paste
6 #almonds
1 tbsp fennel seeds
1 tbsp roasted chana dal
5 green #chilies, coarsely sliced
5 garlic cloves chopped
1 inch ginger, chopped
1/4 cup grated #coconut
1/4 cup mint
1/4 cup coriander
Method
⬇
1)Add the ingredients for the paste in the grinder with 1/2 tsp salt and grind to a fine paste.
2)Heat ghee in a pan and add in the curry leaves, bay leaves, cinnamon, peppercorn and cardamom and let them splutter.
3)Add green chili and onions and fry until onion begins to soften and translucent.
4)Add #tomatoes and cook till they turn soft and mushy.
5)Add salt, coriander powder, cumin powder and turmeric and saute for a min.
6)Add 1/4 cup of water and let the #spices cook for a min more.
7)Add curd and saute till the #oil separates.
8)Add the spice paste and mix well, fry the #masala till the raw smell goes away.
9)Add 1/2 cup water to the gravy and cook till u get the desired consistency.
10)Meanwhile slit the eggs and keep aside..
11)When the #gravy is almost done drop the eggs and let it simmer on a low #flame for 10 mins so it absorbs all the flavor.
12)Serve #hot with rice.

Being a sunday there's easy to make dinner tonight
I have used the readymade instant handva flour available in market - Talod.
Step 1 - As per the instructions on packet, add curd, water and oil. Read the quantity instructions on packet.
Mix the mixture well and let it set for 30 mins.
Step 2 - Add peeled, grated, squeezed bottle gourd, little sugar, chilli powder, pinch turmeric powder, ginger and green chillies paste, chopped tomatoes and corriander, salt to taste(only for the Vegetables we are adding, packet flour already contains salt), mix well everything. Chopped Onions(optional)
Step 3 - Heat oil in kadhai, add mustard seeds, once the seeds crackle, add sesame seeds and hing.
Step 4 - Add the batter, spread thin to thick, however u like it, cover and cook on a slow flame till the base turns golden brown in colour and crisp, flip the handvo gently, cover and cook on slow flame again till the other side turns crispy.

INGREDIENTS:
1 1/2 Tbsp olive oil, divided
1 (3 lb) chuck roast*
Salt and freshly ground black pepper
1 medium yellow onion, peeled, halved and cut into thick slices
5 garlic cloves, minced (1 1/2 Tbsp)
1 1/4 cups cup beef broth
2 tsp Worcestershire sauce
1 Tbsp minced fresh thyme
1 Tbsp minced fresh rosemary
2.5 lbs small yukon gold potatoes, left whole
5 medium carrots (about 1 lb), peeled and cut into 1-inch pieces*
2 1/2 Tbsp cornstarch mixed with 3 Tbsp beef broth, optional, for thickening gravy
2 Tbsp chopped fresh parsley

Внимание! Вам понадобится:
- Печенье Савоярди 12-20 штучек
- Эспрессо 120 мл
- Кипяток 50 мл
- Алкоголь 40 + 20 г (говорят, лучше брать коньяк, виски или ром, но я готовила без)
- Сахар 40 + 200 г
- Молоко 40 г
- Сливки 33% 300 г
- Маскарпоне 250 г
- Экстракт ванили 10 г
- Желатин 5 г
- Какао порошок

Приготовление:
1. Замочить желатин в холодной воде в соотношении 1:6
⠀
2. Приготовить смесь для пропитки печенья: смешать эспрессо (120г), кипяток (50г) и алкоголь (40г), добавить сахар (40г).
⠀
3. Смешать маскарпоне (250г), сахар (200г), экстракт ванили (10г). Маскарпоне можно предварительно оставить вне холодильника на пару часов. Добавить алкоголь (20г). Перемешать лопаткой до однородного состояния.

4. Вскипятить молоко (40г), добавить желатин. Перемешать. Влить молоко в маскарпоне тонкой струйкой, помешивая. Если масса не получится однородной, можно использовать ручной венчик.

5. Замочить печенье Савоярди в кофейной смеси на 5-10 секунд. Не больше. Лучше переворачивать, чтобы оно равномерно пропиталось. Выложить нижний слой десерта.

6. Взбить жирные сливки (250г), до острых пик, смешать с маскарпоне. Должен получиться пышный, гладкий крем.

7. Выложить половину крема на печение, потом слой печения и ещё один слой крема. Верхний слой выровнять и убрать десерт в холодильник часов на 6 (или ночь). Я посылала какао непосредственно перед подачей на стол. Чтобы избежать комочков - используйте сито.
