Spinach and feta Pasta by @panaceas_pantry Recipe⠀ Ingredients⠀ 50g giant pasta shells⠀ ⠀ Marinara sauce⠀ 1 box strained tomatoes⠀ 2 tbsp tomato sauce⠀ 2 tsp olive oil⠀ 4 cloves garlic, crushed⠀ 1/2 tsp finely ground sea salt⠀ Pepper⠀ 4 sprigs fresh thyme, leaves only⠀ 1 sprig finely chopped oregano, leaves only ⠀ ⠀ Instructions⠀ 1. Heat olive oil in medium sized saucepan. Add garlic and sauté for 1-2 mins on until browned⠀ 2. Add remaining ingredients. Bring to a gentle boil, then reduce and simmer for 15 mins, stirring occasionally. ⠀ Meanwhile, prepare the spinach filling⠀ ⠀ 100g vegan feta, crumbled.⠀ 200g spinach (frozen, then defrosted OR fresh and wilted)⠀ 1 onion, finely diced⠀ 3 cloves garlic, crushed ⠀ 2 tsp olive oil⠀ Pinch sea salt⠀ 1/2 cup vegan fermented cashew cheese (store bought, or see the recipe in my story highlights)⠀ ⠀ Method⠀ 1. Heat a frypan over medium flame, then add olive oil. Add onion and salt and cook for 2-4 mins, or until translucent. Add garlic and sauté for a further 30 seconds. Turn off heat.⠀ 2. In a bowl, mix remaining ingredients. Add cooled onion and garlic, and mix together until uniform. ⠀ Assemble⠀ ⠀ 1. Heat oven to 200 degrees C. ⠀ 2. Pour a layer of marinara sauce in the bottom of a deep tray. ⠀ 3. Spoon filling into pasta shells, placing onto the marinara base. You can layer the shells a little if you need to. Once you have finished filling, top with extra marinara sauce, sprinkle with vegan cheese (optional) and bake (covered) for approx 30 mins. Golden Pancakes by @earthlingsasha Recipe⠀ Ingredients⠀ 1/2 cup oat ⠀ 1/2 cup quinoa flakes⠀ 1 tbsp (white) chia seeds ⠀ 3/4 tbsp turmeric powder⠀ 2 tsp ground cinnamon⠀ Crack of black pepper⠀ 2tsp baking powder⠀ 1/2 cup applesauce or mashed banana⠀ 1tbsp Apple cider vinegar⠀ 3/4 cup soy mylk⠀ ⠀ Instructions⠀ Start by blending your dry ingredients in a blender/food processor until the oats + quinoa flakes have become a fine flour. Then add in the rest of the ingredients and blend until all incorporated. Heat a non stick pan to medium high and cook pancakes for 5-7 minutes or until golden and bubbles appear. Flip and cook for a remaining 3-4 minutes before stacking, serving with fruits + maple syrup. CREAMY PASTA ALERT!! Roasted Tomatoes & Pepper with a protein kick served in my little @coconutbowls . A must try now that Tomatoes are in season and pretty delicious! Make sure to find ZE tomato that smells delicious, it’s really worth stretchin the dollar on that !! RECIPE - serves 2 : Sauce: 2 big ripe tomatoes - i insist on the ripeness and taste, don’t cry if it’s not tasty after ;p 1 bell pepper half zucchini 100g firm tofu handful cashews (can be roasted) salt shallot powder or onion olive oil Topping: Pine nuts, Basil 100g tofu scrambled Around 200g raw pasta Method: 1. cut in half tomatoes & pepper (remove seed and white part) 2. sprinkle salt & powder & good dose of olive oil, ensure it’s well coated 3. Roast 25min on the grill or 20min at 200C. Veg should be brown! Meanwhile cook your pasta then drain. Wait a little cool down from the veg. 4. Add all remaining sauce ingredients to the blender (zucchini adds bit of water and your #greens !) - BLITZ on high speed - taste and adjust salt 5. Pour over pasta, then serve in a bowl & prinkle more tofu & pine nuts and basil! voilààà !! Я буду писать реальные факты. ⠀ Вы знали, что?: Разведение скота производит больше парниковых газов, чем весь транспортный сектор, а значит выращивание крупного рогатого скота производит больше парниковых газов чем все автомобили, поезда, корабли и самолёты вместе взятые. ⠀ Вот вам немного Математики: 1. Для одного гамбургера (100г) требуется более 2500 литров воды, а 1 л молока - 1000 л воды. 2. Разведение животных для еды потребляет треть всей пресной воды планеты, занимает до 45% земной суши. 3. Сейчас происходит самое массовое вымирание видов за 65 млн лет. 4. Тропический лес вырубается со скорость 0.4 га в секунду. ( как 1 футбольное поле, ФУТБОЛЬНОЕ ПОЛЕ!) 5. Ежедневно исчезает до 100 видов растений и животных) 6. Чтобы прокормить 1-го вегана необходимо на протяжении года, требуется 0,07 га земли, чтобы прокормить вегетарианца, включая яица и молочные продукты требуется в трое больше, чтобы прокормить среднего чел. требуется в 18 раз! больше земли. 7. Sichuan spicy wontons in Sichuan garlic chilli oil by @nm_meiyee ♥️ . Sichuan chilli oil 1 1/2 cups vegetable oil 5 cloves, minced 2 star anise 1 cinnamon stick 3 tbsp Sichuan peppercorns 3/4 cup red chilli flakes 2 tsp salt Heat the oil, star anise, cinnamon stick, peppercorns in a small saucepan over medium high until oil starts to bubble slightly turn the heat down to medium or low heat. Let it cook for 10 minutes, the seeds and pods should be darker in colour. In a separate heat-proof bowl, add the red pepper flakes, garlic and salt. Remove the aromatics from the oil then pour the oil over the red chilli flakes, and stir well. Allow to cool completely. . Chilli oil (to serve) 1/4 cup tamari soy sauce 6 tbsp homemade Sichuan chilli oil Combine all ingredients and mix well. . . Wonton wrappers 2 cups organic white flour 1 cup boiling water Pinch of salt In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 20 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. . Filling 1 block of firm tofu, drained & crumbled 250g mushrooms, diced 200g pak choy, julienned 1 tbsp minced ginger 3 tbsp Sichuan chilli oil 3 clove minced garlic 1 tbsp sesame oil Salt and pepper . In a large skillet over medium high heat, add sesame oil and cook ginger, garlic until fragrant. Add mushrooms and cook until the liquid released. Add tofu, pak choy stir-fry for another 2-3 mins. Then add the Sichuan chilli and mix well. To make the wontons, take a wrapper, add the filling. Wrap and firmly steal. . Bring a large pot of water to a boil. Add wontons and cook until they are completely cooked through. Drain wontons and transfer to a serving platter. White Bean, Coconut and Roast Pepper Stew (vegan & gluten free) by @rebelrecipes ❤️ (2-4 servings) Ingredients For the roast peppers & tomatoes; •2 organic red peppers chopped roughly •2 handfuls cherry tomatoes •Drizzle olive oil For the stew; •3 tbsp olive oil •2 onions chopped roughly •4 clove garlic sliced •5 large organic tomatoes or 20 cherry tomatoes sliced •1 cup water •1 can organic cannelini beans •1 can organic butter beans drained •1 can organic haricot beans drained •1 tsp sea salt •Black pepper •1-2 tbsp of coconut yogurt or coconut cream •Handful fresh thyme •Pinch chili flakes Directions To make the roast veg; 1Add the peppers & cherry tomatoes to a large baking tray and toss them in 1 tbsp of olive oil. Bake on a medium heat for 30 minutes or until soft and browning a little. To make the stew; 1Add the olive oil to a large pan and add in the onion, fry on a low to medium heat until soft and slightly browning – approx. 10 minutes. Add in the garlic and cook for a further few minutes. 2Next add the fresh tomatoes, stir, turn to low, cover and cook for approx. 5 minutes. 3Add in the roast peppers, water, beans and a little fresh thyme. Cover and simmer for 20 minutes. 4Finally season with salt, pepper, more fresh thyme. A little twist on a favorite: “Mexican Shakshouka” made with tomato sauce, onions, jalapeño, taco spice, melted vegan mozzarella, avocado, and cilantro. . To make, I sautéed some onion and jalapeño in olive oil and then added plain tomato sauce (diced tomatoes would work as well). I mixed in some taco seasoning and then mixed in @miyokoscreamery mozzarella. Crack in the eggs, cover, and cook for 4-5 min until whites of eggs have set.
