So many belly laughs over the weekend (mostly at my expense) I went to Lorne for a girls weekend but with a recent “flare up” with my SIBO, the copious amounts of platters, pizzas and bevs sent my stomach into turmoil!
I’m most relaxed and easy going when I’m with my friends so I’m guilty of putting my needs aside for the ease of the group dinner process. Sometimes it pays off and I feel fine with a bit of wheat or dip but sometimes it’s a very clear reminder that it is not worth it. Nut-free is non negotiable but my physical and emotional state is worlds better when I eat fructose-free and SIBO friendly. Back on antimicrobials to balance my levels out again but a fun weekend nonetheless

RECIPE
1 cup / 250 ml plant milk (I recommend almond)
1/2 cup / 50g rolled oats
2 tbsp chia seeds
Optional: 1 scoop protein powder
.
Topping: fresh berries and maple syrup
.
HOW TO: In a jar, add in plant milk, rolled oats and chia seeds. Stir and let soak over night. Next morning, add in protein powder if wanted. Top with fresh berries and maple syrup!

Since avocados are high in sorbitol they are generally considered high fodmap. But that doesn't mean that you can't enjoy this healthy fruit in moderate serving sizes: they are acctually LOW FODMAP up to 30g!

To make avocado even lower FODMAP (meaning you can eat more) just mix your serving size of avocado with some mayonnaise and a squeeze of lime juice, and you'll have a delicious avocado mayo that tastes amazing on toasts, salads or in this sushi recipe below!

Serves 4
2 avocados (LOW FODMAP: mix 1 avocado with mayonnaise and a squeeze of lime juice)
3-4 seaweed sheets
1 teaspoon sesame seeds
2 cups sticky rice
1/2 tablespoon rice wine vinegar
1/2 tablespoon salt

for the sweet potatoes
3 tablespoons miso paste
2 tablespoons @califiafarms almondmilk (unsweetened)
3 tablespoons soy sauce/tamari
2 tablespoons sesame oil
3 sweet potatoes

Preheat your oven to 400 degrees. Peel and cut your sweet potatoes like fries. Mix with miso paste, almond milk, soy sauce and sesame oil. Place in the oven until cooked through - about 35-45 minutes.

In the meantime, assemble your sushi roll by thinly slicing your avocado and making your sushi rice according to the package instructions. Once cooked, add rice wine vinegar and salt, stir well and let cool.

Once your rice has cooled and your sweet potatoes are ready. Assemble by spreading out your rice on the seaweed and adding your sweet potatoes and avocados in the bottom part of the roll. Top with sesame seeds and roll tightly. Thinly slice and serve.
