Back in CT and made a quick, clean out the fridge, post MDW dinner which was BOMB ⁣ ⁣ Boiled some lemon ricotta ravioli from @traderjoes with frozen peas. Then added a drizzle of EVOO, sun dried tomatoes, power greens & butter. Also threw together a romaine, cucumber & beet salad with sesame ginger dressing ⁣ ⁣ Man it feels good to be back in my kitchen I went home for the weekend and my parents are remodeling our house (kitchen and all), so I ate pretty much all meals out/ take out. I think in the past this would have stressed me out more, but I had such an amazing weekend I honestly didn’t have the time to think about it

It's natural to feel overburdened or stressed considering the extensive roles we play as wives, moms, working or SAHM, daughters, siblings, friends and so on. Keeping sanity and feeling motivated EVERYDAY is not easy. I go through this often. I get restless if things don't go my way or am pushed into things I am not comfortable with. It takes a toll on my mental and physical being but over the years I have tried to figure out solutions because I hate this state of negativity which is unlike my usually happy go lucky self! . If you are going through this phase try some of these tips and #savethispost . It will not only help you bounce back but make you refreshed and energised to take on the challenges head on. Comment with your way to tackle such situations- . Keep your life simple - let go of people, commitments and anything that doesn't serve you or helps you grow. It only overwhelms you distracting you from your goals . Your work is not your life + it's just a part of life. Stop feeling guilty for taking time out for yourself and things you love to do. Take regular breaks. . You are not the center of the universe! Go get some rest. Cut off. No pressure to keep up with. You are always more important for yourself first! . One thing at a time! Keep moving at your own unique pace. While it's ok to be inspired by others but equally important to acknowledge their expertise and experience at handling similar tasks. Give yourself time to get better :) . Competition is a good thing when it forces you to grow but it can easily become toxic when you compare yourself to others! We are all work in progress and if YOU are improving, all is good! . @siddhantchauhan

I freestyled a Veggie Ramen Noodle bowl in a simple Curry, Coconut Milk, Lemongrass and Veggie broth. I sautéed some Mushrooms, Napa Cabbage, and Onions in a Hoisin Sauce. Then added a little Corn, Green Onions, and a drizzle of Chili Oil for good measure. No recipe for this...but it was inspired after seeing a version that @pinchofyum did. Happy Tuesday loves! Took a little break from the gram over the weekend to enjoy some fun in the sun with friends - I hope everyone had a great weekend too ☀️! These warmer temps always have me craving light, refreshing salads . Anyone else? This simple spring salad recipe with spinach, goat cheese, and roasted potatoes is on the blog today. It's got a nice mix of spring veggies + fresh herbs, but also a bit of heartiness from the roasted potatoes + goat cheese. I love this one as a side to baked salmon . Hot nights call for cool and simple dinners and I love a salmon niçoise - a riff on the classic French salad. For my version, I swap in wild salmon, asparagus, and larger meatier olives for the traditional staples. When having salads as mains, you want the veggies to shine and for the meal to fortifying and of course delicious. mustardy salmon salad serves 3-4 1 bunch asparagus 1/2 lb baby potatoes (i like to select a variety of colors for diversity) 4 pasture-raised eggs 1 lb filet of wild salmon 1 to 2 tbsps dijon mustard (depending on your mustard affinity) 3 tbsps pitted kalamata olives 6 cups maché or frisée or a combo of both or other hearty greens 1 tbsp avocado oil or olive oil Dressing 2 anchovy fillets, minced 2 garlic cloves, minced 1 tsp organic lemon zest juice of 2 lemons 1/4 cup olive oil 1 tbsp white balsamic vinegar kosher salt + freshly ground black pepper For the potatoes. Place potatoes in a medium pot covered with an inch of salted cold water. Bring to a boil and cook until fork-tender, 15−20 minutes. Remove potatoes with a slotted spoon to a strainer. Once cool slice in half. For the eggs. In the same pot where the potatoes were cooked, return water to a boil, add the eggs, and cook for 8 minutes. Transfer eggs to an ice water bath and chill for at least 5 minutes. Peel, halve, and set aside. For the asparagus and salmon. Preheat oven to 350 degrees. Trim the bottoms of the asparagus and lay out on half of a parchment paper-lined sheet tray. Toss with 1 tbsp of olive oil or avocado oil and a pinch of salt and pepper. For the salmon. Rub the flesh of the salmon with dijon mustard, a pinch of salt, and black pepper. Place next to asparagus and roast for 10-12 minutes. Check salmon for desired rareness. If you prefer salmon cooked through. Remove asparagus and continue cooking salmon for an additional 5 minutes. To make the dressing. Combine all the ingredients in a jar and shake vigorously. To assemble toss potatoes with a tbsp of dressing. Arrange lettuce on a platter, toss with two tbsps of dressing. Top with potatoes, eggs, olives, asparagus, and salmon (left whole or flaked). Drizzle with remaining dressing. Enjoy.
