Mexican stuffed sweet potato for lunch this is such an easy and filling meal throw together!! I don’t have an exact recipe but this is how I make them

1. Bake your sweet potato at 350F for ~55-60 mins, or be lazy like me: poke holes in it with a fork, cover with a moist paper towel and microwave it for 6 mins
2. Heat olive oil in a pan and sauté diced white onion, halved cherry tomatoes, and black beans. Add onion powder, garlic powder, chili powder, salt & pepper for flavaaa.
3. Stuff your sweet potato with the bean mixture and top with avocado, cilantro, a drizzle of tahini & lime juice so good!!!

You can always keep it simple. Who doesn’t like a chopped salad with avocado slices on top?
