I will never get tired of making vegan sushi donuts!! I made these almost a year ago, and they are my favorite design ☺️ I am moving out of our old space all week, so it still seems fitting to dig up memories of all the things created and shared from this kitchen! Sushi Donuts with Spicy Vegan Shrimp
.
Ingredients:
1 cup uncooked sushi rice
2 tbsp rice vinegar
1-2 sheets toasted nori
1 package @maywahnyc vegan shrimp
1 cucumber
1 avocado
⅓ cup @sirkensingtons Fabanaise (vegan mayo)
½ lime, juiced
2 tbsp sriracha
Toppings — sliced radish, avocado, cucumber, Cavi-Art vegan caviar, pickled ginger

To make:
Cook sushi rice, stir in vinegar, and let cool.
Boil vegan shrimp. Chop about ½ package into small pieces; set aside.
Clean and slice ½ avocado & ½ cucumber. Tear nori into small pieces. Prepare sauce by mixing vegan mayo, lime juice, and sriracha. Mix chopped shrimp, avocado, cucumber, nori pieces, and sauce.
Press a layer of cooled rice into silicone donut-shaped molds; press filling into this layer, and then press a final layer of rice on top to seal. Ensure that the filling is entirely surrounded by rice; let set in fridge, preferably overnight. Carefully remove from molds and add toppings to preference. Enjoy!
"Fish", mash & mushy peas, this was my first time trying the no fish fingers from Iceland. I wasn't terribly impressed, I didn't feel there was much flavour to them, but the coating was nice. Swipe ➡️ to see the texture inside, it reminded me more of mock chicken than fish. I think quorn fish fingers are a better alternative personally
I just buy these things because they're new and I want to add to the demand for vegan food

This was one of the best dining experiences that we had while in Vegas. The ambience, service, and food are superb! I never ate fish prior to going vegan. @mistervegan used to be a life long sushi lover, (before going vegan); and he was thoroughly impressed with the texture and flavor of this roll! All of the food that we had was so fresh + delicious! First time trying Koko vegan cheese melted, it's so good! I just topped mine with some mixed herbs and fish free worcestershire sauce
I tried it before melting, the texture is amazing and the flavour is nice, although I could taste coconut right at the end, which was a bit odd. But I didn't taste any coconut after it was melted, it tastes so close to dairy cheese
I bought mine from @thevegankind it's sold in other places like waitrose too

I made a pan sauce bcuz I think it’s key to keeping that breading ALWAYS crisp instead of having to bake/broil to melt the cheeze. The sauce will harden once it cools off and make for a perfectly warm CHEEZY scoop as you assemble. Buttah-Grill your #veganburger Bun of choice & stack that shiz up!

The tartar sauce is made w/ crunchy “bread n butter” pickles minced in food processor w/ fresh dill springs, garlic, lemon zest, salt/ground pepper- then folded into some #veganmayo , lemon juice, a dollop of @colmansusa Mustard, and a splash of malt vinegar.... THAT BREAD N BUTTAH TARTAR SAUZZE IS BOMB. I have a lot leftover so I can’t wait to try it as a #dairyfree dip for something else.... I still got some buns left
