Mmm.... tis the season for nettle EVERYTHING!!!!!! Enjoy this recipe from @herbalacademy - The season for nettle! Nearly all parts of the spring nettle plant are edible including the young shoot (less than 18 inches), the leaf and tender stem, the flowers, and the seed (in small amounts). The leaf has a deep green “meaty” flavor and can be used in a variety of culinary dishes including soups, stews, omelets, frittatas, quiches, and casseroles. Once the stem grows taller than 18 inches it can be used in tonics and beverages such as tea. All parts of the plant are high in calcium, magnesium, and iron. . . NETTLE SOUP: 3 tablespoons butter 3 tablespoons olive oil 1 large onion chopped ½ cup uncooked rice (wild rice is great but any rice will do) Several large handfuls stinging nettle tops 3-4 cloves chopped garlic 8 cups chicken (or vegetable) broth 1 teaspoon kosher salt, or to taste Mixed vegetables, or corn or whatever veggie you like that day ½ teaspoon freshly ground black pepper, or to taste Potatoes and/or leeks can also be added . . Directions: Carefully pick nettles – gloves are recommended. Take only the top 4-6 inches of new unblemished spring plants that are less than 18 inches tall. Remove the leaves. You may need to rinse and pat them dry. Start cooking your rice. In a separate large soup pan melt the butter, add the onion and garlic and simmer until translucent. Add the broth and onion and garlic mixture and nettles leaves in the soup pan and bring to a full boil. Simmer for about 20 minutes. At this point we use an immersion blender and blend until smooth. Add the vegetables, rice and salt and pepper (and any other herbs you like) and simmer a few more minutes. LILAC AND LEMON CUPCAKES . . ✨ One of my favourite Spring time treats is lilac! The flavour it give to syrups, honeys, cordials and cakes is beyond delicious! It’s incredibly fragrant and floral and the flowers themselves are just so delicate and beautiful. ✨ . . To make the cupcakes I actually used a lemon muffin recipe - because the flavour of lilac is quite powerful and is too much for a light cupcake. I also much prefer a denser, moist sponge and lemon goes so well with lilac. . . To make the icing I used my go-to syrup recipe: one cup water, one cup sugar and one cup flower boiled down until syrupy! I also pop in a few blueberries for a deeper colour. Once the syrup was made I let it cool and mixed with with some water and icing sugar! YUM!

Its almost violet season! Violets are hands down one of my all time favorite flowers. This sweet flower with it’s heart shaped leaves are an easy one to love. In the early 20th century, queer women would often exchange the flower with one another as a flirty gesture. Aside from its love-lore, its been used for culinary purposes for its richness of minerals and has a long history of being a cough suppressant as well as having anti-inflammatory properties. This is a recipe that I found through @feastingathome that uses the lovely little flower in a syrup. Use in spritzers, in an icing, or even a dollop in tea: Ingredients: * 3–4 cups violets, loosely packed, green leaves and stems removed * 1 cup water, boiling * 2 cups granulated sugar, white * squeeze of lemon- optional 1. Place violets in a sterilized glass jar and cover with boiling water, cap, and allow to infuse for 24 hours. 3. After the infusion, strain water through a mesh fine strainer. 4. Add violet water and sugar to a saucepan and heat over medium. 5. Stir occasionally and boil for 5 minutes or until the desired consistency. It will thicken once settled. 6. Add lemon juice. 7. Happy Friday! I will be leaving soon for my trip and am taking a little reprieve from my posts here.
