So many belly laughs over the weekend (mostly at my expense) I went to Lorne for a girls weekend but with a recent “flare up” with my SIBO, the copious amounts of platters, pizzas and bevs sent my stomach into turmoil!
I’m most relaxed and easy going when I’m with my friends so I’m guilty of putting my needs aside for the ease of the group dinner process. Sometimes it pays off and I feel fine with a bit of wheat or dip but sometimes it’s a very clear reminder that it is not worth it. Nut-free is non negotiable but my physical and emotional state is worlds better when I eat fructose-free and SIBO friendly. Back on antimicrobials to balance my levels out again but a fun weekend nonetheless
VANILLA BLUEBERRY PROTEIN CRUMBLE CAKE Berry crumble has got to be one of my fave comfort foods and this Melbourne chilly weather got me wanting alllll the comfort. So of course, I wanted to bake one that wasn’t packed full of sugar and was more nourishing for my body. Don’t get me wrong, I still enjoy a classic crumble from time to time, but this lil number is paleo, gluten free, and made with wholesome, gut-loving ingredients THE DEETS ✨
In a bowl, add 1/2 c coconut flour + 1.5 scoops @happywayau vegan vanilla protein powder (discount code: happymin) + 1/2 tsp baking soda + dash cinnamon + pinch salt and stir to combine. In a seperate bowl, add 1 large whole egg + 1 egg white + 1 tbs pure maple syrup + 1 tbs melted coconut oil + 1.5 tsp vanilla extract + @sogoodau unsweetened almond milk and whisk to combine. Combine two mixtures together and stir well until wet dough forms. Press 2/3 of the dough into a lined loaf tin and blind bake at 180C for 25-30mins. Top cooked base with 1/2 c blueberries (mine were frozen + thawed) and remainder of the dough and sprinkle of rolled oats. Place back in oven and bake for another 25-30mins. Allow to cool completely before cutting into squares ENJOY!

@lolasbakeryuk now offer a gluten free afternoon tea at their West Hampstead Cafe. I went along last week to sample tea and cakes

The afternoon tea starts with open sandwiches (please note you do need to let the cafe know before you attend if you need gluten free sandwiches, as the sandwiches come on gluten bread as standard) and a hot drink of your choice. Then moving on to the gluten free scones, clotted cream and jam - 100% my favourite course!!
And to finish there are mini gluten free cupcakes, mini mousse cups, cheesecake loaves and brownie bites.
This afternoon tea is £30 for two people or £37.59 with Prosecco. I will write a full blog post on the tea, so stay tuned for that #invite
