Shelled pasta stuffed with spinach and cauliflower cream Follow us @vegspirationfeed for vegan recipes Photo and recipe by @beferox Ingredients 400 g pasta shells  60-70 shells 3 tbsp olive oil 1 handful fresh basil leaves Filling 650 g frozen cauliflower florets defrosted 3 handful fresh spinach 1 medium onion chopped 3 cloves of garlic chopped 1 tsp miso paste ca. 1 1/3 cups oat milk 1 tsp salt pinch of pepper 2 1/2 tbsp starch I like to use potato starch 1 tsp dried basil Tomato Sauce 600 ml sieved tomatoes 200 ml soya cuisine (vegan single cream) 1 tsp dried basil 1 tsp dried oregano 2 tsp. paprika salt and pepper to taste 1 medium Onion chopped 3 cloves of garlic minced Directions . Cook pasta shells according to package instructions. Drain and set aside (add some olive oil so the shells won't stick together) . For the filling: Meanwhile, heat a few tbsp of water in a pan over medium heat Add onion and garlic and cook for about 3 minutes Add miso paste and stir well. Remove pan from heat Chop cauliflower florets into small pieces Add Cauliflower, onion and garlic from the pan and spinach to a food processor or high speed blender along with oat milk and blend until smooth and creamy If your blender or food processor is not that big, split everything in 3 to 4 loads and blend seperately or simply combine ingredients in a bowl and blend with a hand held blender Transfer filling to a big bowl and add starch, salt, pepper and dried basil. Mix well . For the tomato sauce: Heat a few tbsp. of water in a pan over medium heat Add onion and cook for about 2 minutes Add garlic and cook for another minute Mix in all the remaining ingredients and cook for about 3-4 minutes or until sauce is hot . Assembling: Preheat your oven to 200°C Divide tomato sauce into two big baking dishes Stuff each shell with a small tbsp. of filling and place them side by side in the baking dishes Drizzle ca. 1-2 tbsp. olive oil over each baking dish with shells Bake in the oven for about 20-25 minutes Let everything cool down for 5 minutes before serving, add basil leaves and ENJOY!

Cornmeal Crusted Baked Potatoes Photo and recipe by @monkeyandmekitchenadventures Recipe:⠀ Ingredients:⠀ 4 large baking potatoes, cut into wedges, lengthwise, skins on⠀ 2 Tablespoons tahini (possibly a little more)⠀ 1 teaspoon garlic powder⠀ 1 teaspoon onion powder⠀ 1 teaspoon sweet paprika (+ more used later)⠀ 1 Tablespoon medium grind cornmeal (+ more used later)⠀ 1 teaspoon sea salt to taste⠀ Sprinkle black pepper⠀ ⠀ Instructions:⠀ Preheat the oven to 400 F. Place the oven rack towards the middle.⠀ Line a baking sheet with parchment paper, set aside.⠀ Mix the seasonings, garlic powder, onion powder, sweet paprika, sea salt, black pepper and cornmeal in a small bowl. Set aside.⠀ Cut the potatoes into wedges, and place in a large mixing bowl. Note: You should be able to get between 6-8 wedges per potato. ⠀ Coat the potato wedges with the tahini, using your hands to get some tahini on all sides of the potato wedges, then once thoroughly coated with a thin coating of tahini, dump the potato wedges onto the baking sheet.⠀ Line the potato wedges up single file across the baking sheet.⠀ Sprinkle with the seasoning mixture. Then take each wedge and rub it with the seasoning mix that fell onto the baking sheet trying to ensure that each side of the potato wedge has a sprinkling of seasoning mixture on it.⠀ Then take some extra cornmeal and sweet paprika and sprinkle over the wedges with a light sprinkling.⠀ Bake in a 400 F oven for 30 minutes or until tender.⠀ When the potatoes are done, you may place them under the broiler for a few minutes to brown them up some more.⠀ Once out the oven, immediately sprinkle with a light amount of sea salt.⠀ Serve with your favorite dressing. Cajun Roasted Cauliflower with Chimichurri Sauce Photo and recipe by @veganricha Recipe⠀ Ingredients⠀ ⠀ Cajun Cauliflower:⠀ 1 small head of cauliflower , sliced into 1/2 inch thick slices or chopped into medium size florets⠀ 2 tbsp cajun spice blend ( 2 tsp sweet paprika, 1/3 tsp cayenne, 1 tsp oregano, 1.5 tsp garlic powder, 1/2 tsp thyme, 1/2 tsp onion powder, dash of pepper flakes⠀ 1/2 to 3/4 tsp salt , if using store bought cajun blend, it might already be salted, so you will need 1/4 tsp⠀ 2 tsp oil⠀ 1 tsp lemon juice⠀ Chimichurri sauce:⠀ 1 cup packed parsley or one bunch parsley leaves and tender stems, chopped⠀ 1/4 cup basil packed or use cilantro⠀ 6 cloves of raw garlic more the merrier⠀ 2 tbsp extra virgin olive oil⠀ juice of 1 lime⠀ 1 tsp lemon juice⠀ 1/4 tsp salt⠀⠀ 2 tbsp or more avocado for creaminess optional⠀ ⠀ Instructions⠀ Slice the cauliflower or chop into florets. Blend the chimichurri sauce with a few tbsp of water and set aside. Line a baking dish with parchment. Preheat the oven to 425 F ( 220 C )⠀ Rub oil and lemon juice all over the slices or florets.⠀ Sprinkle the spice + salt on both sides of the slices and rub lightly. Then sprinkle more on the open side. For Crispyness, mix 2 tbsp breadcrumbs in the spice mix and salt and then sprinkle all over.⠀ Spray oil lightly on the spiced cauliflower to seal the spices in, Bake at 425 F for 20 to 25 mins. Broil for a minute to sear if needed.⠀ Cauliflower tends to soften depending on the moisture content after cooking. So serve immediately. Sprinkle some more spice if needed. Cajun can be hot, so add another cooling dressing of choice if needed.⠀ Serve with a side salad of beans, chickpeas, or cooked grain or add to tacos, wraps. CREAMY RED CURRY W/ VEGGIE GYOZA Follow us @vegspirationfeed for Daily vegan recipes Photo and recipe by @alexafuelednaturally I can’t name a combo that I love more Tag friends and grab recipe below ✨ Ingredients: 1 yellow onion, diced 3 garlic cloves, minced 1 inch fresh ginger, minced 1 tbsp coconut oil 1/2 tsp salt 1/4 tsp pepper 1 cup broccolini, chopped 1 container tofu, cubed (I really like use high protein firm tofu) 1 red bell pepper, chopped small 6 cups filtered water + 1 tbsp bouillon paste (or 6 cups vegetable broth) 2 cans coconut milk 1 tbsp soy sauce 4 tbsp red curry paste 1 tbsp 100% pure  maple syrup 1 tbsp Sriracha (optional) 1 bunch cilantro, for garnish Store bought vegetable gyoza or homemade (I have gyoza recipe on the blog, It will be linked in my bio!) Method: 1. In a large pot over medium to high heat melt coconut oil then add diced onion, minced garlic and minced ginger. Sauté all together for 5 minutes. Season with salt and pepper for 5-6 minutes then add chopped bell peppers, tofu, broccolini & sauté for 7 minutes, stirring as it cooks.  Add vegetable broth, coconut milk, soy sauce, curry paste, maple syrup and stir. Bring to a simmer and cook for 10 minutes or until vegetable are tender. 2. In a blender carefully spoon 4-5 cups of broth and the red bell pepper to the blender. Blend on high for 1 minute then pour back into pot. Stir and let simmer for an additional 5 minutes. 3. Make gyoza according to the directions on package or if you’re following my recipe for homemade gyoza follow the directions accordingly. 4.
