Chickpea and vegetable curry
1/2 onion, chopped
1/2 medium zucchini, chopped
1/2 red bell pepper, chopped
1/2 can chickpeas
1/2 cup coconut milk
2 tsp curry powder
1 tsp turmeric
1 tsp cumin
1 tsp corn starch
Salt and pepper to taste
1 cup fresh spinach
Add the onion to a non-stick frying pan and cook for 2-3 minutes, until softened. Add the zucchini and bell pepper, cooking for a further 4-5 minutes on a low-medium heat. Then, add the chickpeas and the coconut milk, curry powder, turmeric, cumin, and cornstarch. Stir until the sauce thickens (around 2-3 minutes), stirring frequently. At the last minute season to taste with salt and pepper, also stirring in the spinach until it wilts, then serve with rice or noodles of your choice. •

TOFU KATSU CURRY.
Simple, elegant and totally delicious. ------INGREDIENTS------ For the tofu:
35g (1.2oz) plain flour
60ml (1/4 cup) plant based milk
80g (2.8oz) vegan-friendly cornflakes
300g (10.5oz) extra firm tofu
For the sauce:
½ onion
2 medium carrots
2 garlic cloves
½ tbsp curry powder
½ tsp garam masala
1 tbsp plain flour
300ml (10.1fl.oz) vegetable stock
2 tbsp coconut cream
To serve:
150g jasmine rice
2 handfuls of mixed salad leaves
1 spring onion
The cupboard essentials:

Booking this trip was not only a brilliant idea because of the daily surfing experience but also because the food at the camp is INSANE. ☺️ There’s heaps of options for breakfast (and it’s super easy to have a vegan breakfast as well ) and dinner is always insanely tasty. Whilst every second dinner is vegetarian (and sometimes even vegan) for all guests anyway, the meals that aren’t vegetarian always (!) have a vegetarian and sometimes vegan option (eg. lasagna, barbecue, stew... you name it). Hearty chickpea curry - such flavorful comfort food, delicious and packed with nutrients!

INGREDIENT LIST:
1 tbsp turmeric
1 tbsp cumin
2 tbsp ground coriander

base:
2 onions
2 cups cherry tomatoes
4 garlic cloves
3 tbsp ginger
2 red chili deseeded
.
1 tbsp salt
1.5 cups coconut cream (can also use milk or water, but wont be as rich)
4 tbsp tomato paste
1 cup parboiled (partly boiled) red lentils (cook them separately but not all the way through otherwise they’ll be too mushy)
1 broccoli head
2 cups water
3.5 cups canned chickpeas
1 spinach bag (200g)
handful fresh coriander (cilantro)

I definitely wish this chickpea and vegetable curry was my dinner today. It’s been quite a stressful week for sure and today wasn’t the most productive lol, but I’m taking a little bit of time to relax this evening and not stress out about it. Chickpea and vegetable curry recipe
1/2 onion, chopped
1/2 medium zucchini, chopped
1/2 red bell pepper, chopped
1/2 cup coconut milk
2 tsp curry powder
1 tsp turmeric
1 tsp cumin
1 tsp corn starch
1 cup fresh spinach
Add onion to a non-stick frying pan and cook for 2-3 minutes, until almost ready. Add the zucchini, and cook for a further 4-5 minutes on a low-medium heat. Pour in the coconut milk together with the chickpeas, curry powder, turmeric, cumin and corn starch. Simmer until the sauce thickens (around 2-3 minuets), stirring frequently. At the last minute, season to taste with salt and pepper and serve with rice or noodles of choice.

Either as a quick and easy weeknight dinner, or a meal to share with friends and family, this is definitely a fail-proof recipe, which I’ve shared below incase you want to give it a go. Chickpea curry recipe
1 medium onion, chopped
1 clove garlic, minced
1 tsp garam masala
1 tsp ground ginger
1/2 green bell pepper, chopped
1/2 medium zucchini, chopped
1 can coconut milk
2 tsp curry powder
1 tsp turmeric
1/2 tsp cumin
Salt, to taste
1 can chickpeas, drained and rinsed
1 tsp cornflour
Spinach
Rice or noodles, to serve
Add the onion, garlic, garam masala and ground ginger to a non-stick frying pan. Cook for 2-3 minutes, until fragrant. Then, add the green bell pepper and zucchini, cooking for around 4 minutes more. Pour in the coconut milk and add the curry powder, turmeric and cumin. Season to taste with salt and allow to simmer on a low-medium heat for around 5 minutes. Add the chickpeas and cornflour and stir for a further 2 minutes to allow the sauce to thicken. At the last minute, add the spinach and then serve immediately with rice or noodles of choice.
